How To make Chuck Wagon Bean Pot
Ingredients

bean, any variety, dry
1
each
ham, hock, or shank
1
each
onion, chopped

water

teaspoon
salt

green chili salsa, up to 10 oz, or use tomato sauce, canned or stewed tomatoes
Directions:
Rinse the beans and remove any foreign matter. Mix all ingredients in the cooking vessel.
IF USING A SLOW-COOKER: Cover, set temperature at low, and forget for at least 10 hours. If you have only half a day, cook the mixture 5 or more hours on high.
IF USING A STOVE: Heat all ingredients to boiling with pot uncovered. Turn down heat, cover, and simmer gently, adding enough boiling water to keep beans well covered. Most bean varieties will be done in 2 to 3 hours.
When beans are done, take out ham bone, cut off the meat and put it back into the pot. Serve hot with corn bread or muffins.
Green chili salsa is a Mexican sauce made from green chili peppers, onions, vinegar and other ingredients.
NOTES: A Hearty Bean Stew. This savory stew, featuring ham and beans, borrows its robust seasonings from the chuck wagon cooks of the old western cattle ranges. The secret is long, slow cooking, and your electric slow-cooker is ideal for the job. Just follow the directions that come with your particular model. If you don't have one, slow-cook the mixture on top of the stove in a heavy pot with a lid.

Cowboy Pinto Beans Recipe
1 pound dried pinto beans
1 large yellow onion, sliced
1-2 jalapeños, diced
1 ham hock (8 to 10 ounces)
1 1⁄2 tablespoons dried cilantro
½ tablespoon Red River Ranch Original Seasoning
½ tablespoon Mesquite Seasoning
1. Pour the beans into a large soup pot. Pour enough water over the beans until they are covered by about 2 - 3 inches.
2. Add the onion, jalapeño, ham hock, and cilantro. Cook over high heat until the mixture reaches a rolling boil, stirring occasionally.
3. Cover and boil hard for 30 minutes, stirring occasionally. As soon as the beans are boiling, you may need to add more warm water to keep them slightly covered and throughout the cooking process.
4. Reduce the heat to medium. Stir in the spices. Cover and simmer for 11/2 to 2 hours, stirring occasionally, until the beans soften. Season again to taste, if necessary.

INGREDIENTS:
1 pound ground beef
2 cups northern beans - drained
2 cups kidney beans - drained
2 cups butter beans - drained
1 large diced onion
1/2 cup diced bell pepper
1 cup diced tomatoes
2 cloves minced garlic
1 cup tomato sauce
1/2 cup ketchup
1 tbsp. Worcestershire sauce
1 tsp. dry mustard
salt and black pepper
2 tbsp. brown sugar
1/4 cup molasses
Bake covered at 350 degrees for 2 hours.
Serve with cornbread, rice, pasta, mashed potatoes or even
a loaded potato. Enjoy.

Chuckwagon baked beans!
We have made this recipe so many times as we have perfected it over the years. Here's our take on chuckwagon beans in a crockpot! Cook on high for 4 hours then reduce to warm to serve.
1lb ground beef, browned
1 medium diced onion sautéed
12 oz bacon, cook crisp
3 tbsp bacon drippings
1 (16 ounce) can great northern beans
1 (16 ounce) can kidney beans
1 (16 ounce) can pork n' beans
3/4 cup brown sugar
1⁄2 cup white sugar
1⁄2 cup ketchup
1⁄2 tbsp prepared yellow mustard
1tbsp molasses
1 tsp Worcestershire sauce
On stovetop, or microwave cook bacon crispy.
Then brown ground beef with the diced onion.
Place first 3 items in crockpot with all the other ingredients.
Add the 3 cans of beans; do not drain beans.
Cook in crockpot for 4 hours on high, then turn to warm to serve delicious y'all!
