Ingredients
Makes 10-12 servings
Chocolate Cake
1 3/4 cup (220g) all-purpose flour
1/2 cup (60g) unsweetened cocoa powder
1 tsp (5g) salt
2 tsp (8g) baking powder
1/2 cup (113g) unsalted butter, soft
1 cup (200g) sugar
5 eggs
1 1/2 tsp (7g) vanilla extract
1 cup (240g) sour cream
5 oz (140g) semisweet chocolate, melted
Raspberry Filling
14 oz (400g) fresh or frozen raspberries
1/2 cup (100g) sugar
2 tbsp (30ml) lemon juice
Extra raspberries for filling
3.5 oz (100g) fresh raspberries
Chocolate Ganache for Filling
5.5 oz (160g) semisweet chocolate, chopped
2/3 cup 2/3 cup (160g) whipping cream
Whipped Ganache
7 oz (200g) semisweet chocolate
7 oz (200g) whipping cream
Chocolate Shards
3.5 oz (100g) semisweet chocolate
1 oz (30g) semisweet chocolate, small pieces, for tempering
For decorating
fresh raspberries
powdered sugar, for dusting

Chocolate Mousse Raspberry Cake
Chocolate mousse raspberry cake is a layered cake filled with chocolate mousse and raspberry puree.
For Chocolate Sponge Cake
5 egg yolks
1 egg
60 g butter
80 g dark chocolate
50ml milk
90 g plain flour
1 tbsp cocoa powder
5 egg whites
100 g sugar
For Chocolate Mousse
200 g melted dark chocolate
300 ml whip cream
50 g sugar
For Raspberry Filling
2 cups raspberries
1/2 cup sugar
2 ts lemon juice

Cotton Sponge Cake (chiffon), pan size 15 x 10 in (or 25 x 40cm)
3 egg yolks
45ml milk (3 tbsp)
45ml oil (3 tbsp)
5ml vanilla extract (1 tsp)
55g cake flour (7 tbsp)
3 egg whites
a pinch of salt
50g sugar (4 tbsp)
Bake at 170C for 20 - 22 minutes (preheated oven)
Raspberry Coulis
200g forzen or fresh raspberries (7oz or 1.5 cups)
50g sugar (4 tbsp)
2 tsp lemon juice
Cook 5 minutes over medium heat, sift to remove seeds and cool down
Raspberry Cream Cheese
200g cream cheese (7oz), softened
40g sugar (3 tbsp)
200ml heavy cream (1 cup)
70g raspberry coulis (1/3 cup)
6g powder gelatine (2 tsp), bloomed with 30ml (or 2tbsp) water and melt in the microwave for 10 - 12 seconds
Raspberry Jelly
75g raspberry coulis (1/3 cup)
75ml water (1/3 cup)
6g gelatine powder (2 tsp), bloomed with 30ml (2 tbsp)water and melted
Raspberry Syrup
2 tbsp raspberry coulis
3 tbsp water

Chocolate and raspberry mousse cake: too delicious not to try it!
This cake has all the flavor you desire in a decadent dessert!
INGREDIENTS
• 250ml milk
• 360g flour
• 250g sugar
• 50g cocoa
• 250g cream
• 150ml oil
• 20g baking soda
• 3 eggs
• 120g sour cream
• salt
For the raspberry mousse:
• 500ml cream
• 500g raspberries
• 20g gelatin
• 100g sugar
METHOD
Dough: Mix flour, sugar, cocoa, soda, and salt. Then add milk, eggs, sour cream, butter, cream. Mix to combine. Pour the dough into a baking sheet. Bake at 180C/350F for 40-50 minutes
Mousse: Beat raspberries with a blender, strain through a sieve. Add sugar, gelatin. Beat the cream to the peaks and add the cooled raspberries.
Pour mousse onto the cooked chilled biscuit. Flatten. Cool.
