Chicken Avocado Wraps | How to Make Them!
These chicken & avocado wraps are the tastiest treats. They're really easy to make and take no time at all. Chuck the chicken in the oven and whilst it's cooking the rest of the recipe can be prepared and the kitchen can also be cleaned during this time. All up, this recipe takes no more than 30 minutes from start to finish to set you up for the whole week with lunch and dinner or breakfast if you're game enough.
Makes - 5 Wraps
Ingredients -
Chicken & Wraps -
1 tsp (5ml) - Olive Oil
600g (1.32lbs) - Chicken Thigh, Boneless & Skinless
1 1/2 tsp (4g) - Onion Powder
1 1/2 tsp (4g) - Garlic Powder
1 1/2 tsp (4g) - Smoked Paprika
1/2 tsp (0.5g) - Red Chilli Powder
1 - Avocado, Diced, Sliced, or Mashed
100g (3.5oz) - Mozzarella Cheese, Freshly Grated
5 - Burrito Tortillas
7.5g (0.26oz) - Flat Leaf Parsley (Optional)

►1 lb cooked chicken* (2 large chicken breasts)
►3 medium or 2 large avocados
►1 cup corn (from 1 cooked cob)
►6 oz Bacon, cooked and chopped
►1/4 cup Chives or green onion, chopped
►2 Tbsp chopped dill

4 oz mixed lettuce (baby chard, baby spinach, arugula, green leaf)
1 oz thinly sliced red cabbage
4 pcs chicken breast
1 tbsp lemon juice
1 tbsp olive oil
2 tbsp vegetable oil
1 tbsp taco mix seasoning
3 oz sliced avocado
¼ cup cotija cheese or feta Cheese
¼ cup corn kernel
⅓ cup pico de gallo
Salt and pepper to taste
2 tbsp sour cream, to serve
Creamy Cilantro Lime Dressing
1 large bunch of fresh cilantro
½ cup sour cream
1 garlic clove
Juice of 2 limes
1 tbsp honey
½ tsp kosher salt
1 pc pickled jalapeno, sliced

Creamy Cilantro Lime Dressing
0:11 Add the cilantro, yogurt, garlic, lime juice, honey, salt, and jalapeño (if using), into a food processor or blender. Put the lid on and blend. Stop and taste, adjust with a little more salt or honey, if desired.
0:23 Pour the dressing into a glass jar with a tight-fitting lid. The dressing will keep in the refrigerator for up to 1 week.
Salad
0:25 Rub the chicken breast with olive oil, lemon juice, and taco mix seasoning.
0:33 Cook the chicken in vegetable oil for 7 minutes per side or until internal temp reaches 165 degrees F and set aside to rest.
0:37 Toss the mixed lettuce and red cabbage in the cilantro dressing followed by the remaining ingredients and top with a diced chicken breast. Add sour cream. Serve and enjoy!
