How To make Chicken Thighs Glazed with Orange Thyme Cumin
1/2 c Dry white wine
1/4 c Red wine vinegar
1/4 c Fresh orange juice
2 tb Fresh lime juice
3 tb Soy sauce, low sodium
2 tb Fresh thyme leaves
Minced 1 Clove garlic :
minced
1 tb Honey
1 ts Fresh ginger minced
1 ts Ground cumin
1 Chopped jalapeno pepper :
Seeded, optional 8 Skinless chicken thighs
Remove the skin and the surface layer of fat from the thighs. Rinse. Towel dry. In a large nonstick skillet, combine the sauce ingredients, including the jalapeno. Over medium-high heat, bring the mixture to a boil, then add the chicken (bones up). Reduce theheat to low, cover and simmer for 15 minutes. Remove the cover, turn the chicken pieces over, raise the heat to medium and cook until the liquid is evaporated and the chicken is glazed, about 10 to 15 minutes. Adjust heat as necessary. PanTry: Shoyu, a Japanese soy sauce that is lower in salt. Substitutions: Vegetable stock or water for dry white wine. Canned jalapeno pepper. 1 tablespoon of garlic chives, snipped instead of clove garlic. Do NOT substitute white meat. Pat's note: If you make 6 thighs, do *not* reduce the recipe's sauce. - 2 Lbs Chicken Thighs (Cleaned and Patted Dry)
- 1 Tbsp Olive Oil
- Olive Oil Spray
- 1/2 to 1 Tsp Minced Garlic
- 1 Tsp Honey
- 1 Tbsp Lemon Juice
- 1 Tbsp Garlic Powder
- 1 Tbsp Onion Powder
- 1 Tsp Black Pepper
- 1 Tbsp Lemon Pepper Seasoning
- 1 Tsp Dried Thyme
- 1 Tsp Dried Basil
- 1 Tsp Smoked Paprika
- 1 to 2 Tsp Seasoned Salt

Chicken is crusted in an amazing combo of toasted cumin and coriander then glazed with a delicious combo of blood orange, maple and rosemary.

INGREDIENTS:
4 Boneless Skinless Chicken Breasts
1 tablespoon toasted and freshly ground Cumin
1 tablespoon toasted and freshly ground Coriander
1 teaspoon Kosher Salt
2 tablespoons Butter
2 tablespoons Light Olive Oil
2 medium Shallots, sliced
3/4 cup Blood Orange Juice, strained {about 4 blood oranges}
1/2 cup Low-Sodium Chicken Broth
1/2 cup Maple Syrup
2 teaspoons chopped Fresh Rosemary
1/4 teaspoon Coarse Ground Black Pepper
DIRECTIONS:
Preheat your oven to 400 degrees.
In a small bowl; combine the cumin, coriander and kosher salt. Season both sides of four chicken breasts using all of the spices in the bowl.
Add the two tablespoons of butter and olive oil to a large 12-inch oven-safe skillet and heat over medium-medium/high heat.
Once hot add the chicken in {top side down} and cook for 4-5 minutes or until a nice crust forms and it is easy to turn the chicken. If the chicken sticks, it needs more time.
Once the crust has formed, flip and slide the whole pan into your preheated oven. Bake the chicken for 20 minutes. Once the chicken is fully cooked, use tongs to transfer the chicken to a clean plate and tent with tin foil to keep warm
Heat the skillet over medium-high heat and add in the sliced shallots. Cook, stirring occasionally until they're soft and translucent. Next, pour in the blood orange juice, chicken broth and maple syrup. Add in the rosemary and black pepper and simmer until reduce by half to 75 % and a thick glaze remains... about 8-10 minutes.
Taste and season with kosher salt to taste {if needed} and add the chicken back it to warm up a tad more, then spoon the glaze over top of the chicken and serve.

????1 tablespoon tomato paste
????1 teaspoon honey

Baked Orange Chicken
Ingredients:
Red Onion
Salt
2 Garlic cloves
18 oz of frozen condensed orange juice
1 cup of dried apricots
3-4 teaspoons of turmeric
3-4 teaspoons of paprika
2-3 teaspoon of cinnamon
1/4 teaspoon of cumin
2 tablespoons of Soy sauce
1/2 cup of rose
Coconut milk
Chop the red onion and saute in an oven-safe pan (cast iron) with avocado oil
Add a pinch of salt
Coarse chop the garlic and add it to your pan, then mix
Add the chicken on top of the onions, starting with the dark meat
Cut the dried apricots as the chicken is searing
Season the chicken with 2 teaspoons of salt, 2 teaspoons of turmeric, 2 teaspoons of paprika, 1 teaspoon of cinnamon, and 1/4 teaspoon of cumin
Once the first side of the chicken is nicely seared, flip it over
Add seasoning to the other side of the chicken: 1 teaspoon of each seasoning except cumin
Then add the apricots on top
Add the rest of the chicken (white meat) on top
Add 2 tablespoons of soy sauce
Add more turmeric, paprika, cumin, and cinnamon on top of the white meat
Add 1/2 a cup of Rose and enough coconut milk to cover half of the chicken
Add the condensed orange juice on top
*the dark meat sits at the bottom since it takes longer to cook*
Place your pan in the oven and close with a lid
Bake at 450 degrees for about 2 hours. Check it after the first hour. Mix it and taste to see if it is seasoned to your liking
