How To make Chicken Fondue in Ginger Broth

white wine, or 1/4 c cider or rice vinegar

garlic, cloves, minced

Chicken and Vegetable Trays:
1
pound
chicken, breasts, boneless, skinless
1/2

broccoli, bunch
1
each
yellow summer squash or zucchini
2
cup
swiss chard, torn, or romaine lettuce
1
each
sweet red pepper, or green pepper
1/4
pound
mushrooms
1
hot chili sauce (recipe follows)
1
garlic sauce (recipe follows)
Directions:
Cooking stock: In fondue pot, electric skillet or electric wok, combine chicken stock, white wine, lemon slices, garlic, ginger and sugar. Just before serving, heat to simmer.
Chicken and Vegetable Tray: Cut chicken into 3/4 inch pieces; place on serving platter. Cut broccoli, summer squash, swiss chard and sweet pepper into bite-sized pieces; arrange along with mushrooms on a separate platter.
Using long fondue forks, spear chicken or vegetables; dip into simmering fondue broth to cook. Cook chicken pieces until no longer pink inside, and vegetables until tender-crisp.
Serve with Hot Chilli Sauce and Garlic Sauce for dipping.
Garlic Sauce:
1/2 c light sour cream or low-fat yogurt or a mixture of both
2 ea garlic, cloves, minced.
1/4 c parsley, fresh, chopped
(For a variation, substitute chopped fresh basil or coriander, to taste for the garlic and reduce the parsley to 1 tbsp.)
In a small bowl combine sour cream, garlic and parsley.
Hot Chili Sauce:
1/3 c water
2 tb lemon juice or lime juice
1 tb soy sauce, low-sodium
1 ts sugar
1/4 ts hot pepper flakes
In a small bowl, combine water, lemon or lime juice, soy sauce, sugar and hot pepper flakes.

✅ Meat fondue [complete recipe]
For this recipe, we use our own beef broth recipe, which is detailed at the end of the description.
Meat fondue recipe
Meat fondue ingredients:
1 liter of beef broth (recipe described at the end);
1 liter of red wine;
3 small onions;
5 slices of ginger;
1 tablespoon of soy sauce;
6 cinnamon husks;
3 star rings;
1 tablespoon of black pepper;
3 cloves;
1 piece of filet mignon cut into small cubes.
How to prepare the meat fondue:
(1) Put the wine in a fondue pot.
(2) Add onions, ginger, cinnamon, anise, black pepper and cloves.
(3) Simmer for 2 minutes.
(4) Add soy sauce and broth.
(5) Simmer for another 2 minutes over medium heat.
(6) Skewer a cube of filet mignon and cook in the meat fondue until it reaches your taste.

Beef broth recipe
Meat broth ingredients:
1kg of beef cut into cubes;
1 chopped onion;
2 chopped garlic cloves;
1 celery stick;
1 leek;
1 sprig of rosemary;
1 bunch of thyme;
1 tablespoon of salt;
5 bay leaves;
1 bunch of chopped chives;
1 bunch of chopped parsley;
1 bunch of chopped coriander;
1 tablespoon of black pepper;
3 liters of water;
4 tablespoons of oil.
How to prepare the meat broth:
(1) Put the oil in a pan and add the minced meat.
(2) Let the meat brown well and add the salt, pepper, bay leaves, thyme and rosemary.
(3) Stir for 2 minutes while the mixture is fried.
(4) Add the chives, parsley, cilantro, garlic, celery and onion.
(5) Finally, add water and cook for 2 hours over low heat.
(6) Once ready, strain the broth and set aside to be added to the meat fondue.

Ginger Amazake Nabe - a healthy and delicious donabe hot pot recipe and it’s one of my favorite hot pot dishes of the season to bring comfort and keep me warm! Hope you get to try it home. Feel free to substitute chicken with just vegetables or seafood, to make it your own way.

Equipment: Medium-size #donabe

(Ingredients - for 2 - 3 servings)
2.5 C (600 ml) dashi
2 T sake1 tsp moshio sea salt (or regular sea salt)
4 - 5 leaves medium napa cabbage, cut into bite-size pieces8 oz (220 g) satsuma-imo (Japanese sweet potato) cut into bite-size pieces
12 oz (360 g) boneless skinless chicken thigh, cut into bite-size pieces (and lightly season with some sea salt for 2 - 3 hrs if possible)
2 T miso
1 T ginger, cut into fine shreds
7 oz (200 g) medium-firm tofu, cut into 6 - 8 pieces
5 oz (150 g) shimeji mushrooms (I used white shimeji)
1/3 C (80 ml) amazake (undiluted, available at @toirokitchen)
3 oz (100 g) komatsuna (Japanese spinach) or your choice of leafy vegetable, cut into bite-size pieces
Thinly-shredded yuzu citrus rind, optional
Kanzuri (fermented chili & yuzu paste from Niigata, Japan, available at @toirokitchen ), for serving (optional)

(Procedure)
1. Heat the dashi in a #donabe over medium-high heat. Add the sake and salt. Add the bottom half of the napa cabbage, satsuma-imo, and chicken. Cover with lid and bring to a simmer. Simmer for a few minutes.
2. Add the miso, ginger, and stir. Add the rest of the napa cabbage, tofu, shimeji, and cover with lid again. Simmer for a few minutes.
3. Add the amazake and stir. Add the komatsuna and yuzu (I forgot to add the yuzu in the video!). Let the komatsuna wilt.
4. Serve right at the table into individual bowls. Enjoy with a little dab of Kanzuri on the side, if you like.

Hot Pot in a Fondue Pot
First Video of 2021!!!
I've never made or eaten hot pot. I'd been meaning to head to Koreatown here in NY and try it, but then the pandemic hit and that wasn't an option anymore so I decided to make it at home for our New Year's Eve dinner. I didn't have a hot pot set up but hot pot looks kind of like fondue so I thought why can't I make this in a fondue pot? I'm happy to say it was a success.
This is such a fun meal to make for family and friends because everyone gets to choose what they want to cook so you're not stuck with only one or two options. It's interactive and delicious and I will definitely be making this again.
