Green Enchiladas | Shredded Chicken Enchiladas Recipe | Enchilada Sauce
Green Enchiladas are my favorite enchiladas. I love the Tex Mex food that I grew up eating here around San Antonio. This chicken enchiladas recipe is one that I have developed and I compare all other green enchiladas to mine. So next time you are in the mood for Mexican food, or Tex Mex food than give this simple enchilada sauce recipe a try. I also recommend cooking down your own chicken to shred. I will have a link below for the way I prepared my shredded chicken and one for the tomatillo salsa I used for my enchilada sauce. The red sauce, picante sauce, is also a very good salsa that I will put up against the best and you can easily make it. Now if you do not want to cook your own chicken, then just by a rotissorie chicken or use some left overs you have. Thanks for watching my green enchiladas video and please give it a try. Tomatillo Sauce
2lbs Tomatillos
2cups Water
1tsp Cumin
1tsp Pepper
1tsp Salt
2 Medium White Onions
2 Serrano Peppers
4-5 Cloves Garlic
Place all but spices in a pan and boil until tender.
Add seasonings and blend until smooth
If sauce is to thick add a small amount of water.
After Rolling enchiladas cover with sauce and cheese and bake at 350°
for about 30 minutes. Enchiladas shoule be heated through and cheese melted and staring to brown.

FORGOT TO MENTION THAT I ADDED 2 TBLS CHICKEN CONSOMME TO BROTH) pls adjust.
2 chicken breasts
5 medium green tomatoes
2 1/2 tablespoons butter
1 tbls olive oil
Salt
Pepper
1/2 tsp cumin
1/2 tsp oregano
2 garlic cloves
1 4oz. Can green chilies
2 cups chicken broth
1 handful finely chopped cilantro + a little pinch more for garnish
1/4 chopped onions
Grated cheese (Monterrey Jack, pepper jack, cheddar and mozzarella)
Mexican crema10 corn tortillas
Boil chicken till well cooked with 1 big garlic clove, salt and 3 cups water... set chicken to cool, and reserve broth
In a blender I pureed tomatoes, 2 big garlic cloves and small can of green chilies with 1/4 cup water and set aside
I melted 2 1/2 tbsp butter and 1 tbsp olive oil
Added 2 tbsp flour and whisked non stop till golden brown, then added 2 cups broth
Simmer 5 minutes
After 5 minutes, I added chopped cilantro, cumin, oregano, salt, pepper (adjust salt to your liking)
Simmered on low for 5 more minutes
While simmering, I heated oil in another pan and quickly dipped tortillas 1 at a time in and out...set aside
Got my baking dish and put enough green sauce to coat bottom well, then drizzled crema
Filled my tortilla with chicken, onions, cheese and little sauce (rolled enchilada and set in dish)
I rolled enchiladas side by side leaving a little space in between each
I spread sauce over enchiladas then drizzled crema and topped with cheese, crema and a little chicken bits
I put in oven and baked for approximately 15 minutes on 350°
Served and garnished with cilantro, chopped tomatoes and crema and a pinch of love.❤

INGREDIENTS
24 oz jar green salsa
14 to 16 corn tortilla
1 lb chicken boneless breast or thighs
1 Liter of water
1 Tbsp chicken bouillon powder
onion
2 cloves garlic
1/4 tsp dried Mexican oregano
*salt and season shredded chicken to taste
4 oz Cotija cheese

Green Enchiladas
A grateful gringo's totally inauthentic interpretation of a great Mexican classic.
Makes 8-10 enchiladas, serves 4-5 people
olive oil
4 chicken thighs (boneless skinless is easiest)
2 large white onions
white wine (optional)
cumin
coriander
paprika
pepper
salt
4 jalapeños (or other green chiles)
1.5 pounds tomatillos
1 lime
4-5 garlic cloves
1 bunch cilantro
8 oz Monterey Jack cheese
8-10 7-inch tortillas (I do flour, you could do corn)
Fry the chicken thighs in olive oil until browned, and remove. Roughly chop one of the onions and fry it in the same pot until golden. Put in maybe a teaspoon (or more) each of the ground cumin, coriander and paprika, grind in some pepper, and fry the spices for a minute. Put the chicken back in, and cover with about half white wine, half water (or all water if you don't want to use wine). Mix in a pinch of salt. Cover, reduce heat to a simmer, and cook until the chicken is just starting to fall apart, maybe a half hour. Take the chicken out and chop it up into small chunks. Boil the braising liquid down to a thick glaze. Mix the chicken into the glaze.
For the salsa verde, pre-heat the oven to at least 400 F. Cut the chiles in half, scrape out and discard the seeds (or leave them in if you like it spicy). Husk the tomatillos and cut them in half. Peel the other onion and cut it into a few large chunks. Cut the lime in half — only use one half of it if you don't like your food too acidic. Put the veggies and lime into a wide pan and toss them in olive oil. Put the pan into the oven. While the salsa is roasting, peel the garlic cloves. After the salsa has a bit of color, put in the whole garlic cloves and stir everything around. Continue cooking until the veggies seem half cooked, maybe 20 minutes total. Take the pan out. Squeeze the juice out of the lime and discard. Dump the salsa into a food processor with a handful of cilantro and puree until reasonably smooth. Return the salsa to the wide pan.
Grate up the cheese. Put maybe half a cup of the salsa into the chicken, along with half of the cheese. Mix up the filling and check for seasoning.
Grease up a 7x11 inch baking dish. Dunk a tortilla into the salsa, then bring it to the baking dish. Scoop in a modest line of filling, and roll up the tortilla, seam-side down. Repeat until you've filled your baking dish and/or exhausted your filling. Spoon the rest of the salsa on top of the enchiladas, and sprinkle on the rest of the cheese. Bake uncovered until the cheese is browned to your liking, maybe 20 minutes. Top the individual enchiladas with more cilantro, if you're into that.
