How To make Cheese Triangles
1 c Shredded Jack cheese
-=OR=- Cottage cheese 2 Eggs; well beaten
1/2 c Chopped parsley
1 ts Salt
10 Sheets phyllo pastry
1 c Unsalted butter; melted
Combine cheese, eggs, parsley and salt and mix well. Cut each sheet of phyllo dough in halves, working with one sheet at a time. Keep rest of pastry covered with damp towel until ready to use. Brush with butter and fold each half twice vertically to form narrow strip. Place about 1 tablespoon cheese mixture at one end of each strip. Fold one corner across filling to form triangle. Brush with more butter. Continue folding in triangles, flag-style, and brushing with butter. Place triangles on baking sheets and bake at 350F until pastry is golden, about 15 to 20 minutes.

Traditional Tiropites made from scratch. This video will show you step by step how to make the delicious cheese triangles. Recipe below.
Tiropites (cheese triangles)

Makes approximately 300 (half recipe to reduce quantity)
Ingredients
Filo pastry
2kg Lion plain flour, sifted
500g 00 flour, sifted
2tbs salt
1 cup butter, melted
6 cups warm water (approximately)
Cheese filling
2kg Riverina fetta cheese, coarsely grated
1.5kg La Casa del fromaggio Ricotta, roughly grated
1kg cream cheese/ Neufchâtel, grated
10 eggs, beaten
½ cup olive oil
1 cup milk
Pepper
Method
Filo Pastry
Sift both flours in a mixing bowl. Add salt and melted butter.
Rub butter into flour and salt.
Add warm water slowly and knead dough until smooth.
Cover and rest for a minimum of 20 minutes. The longer the dough is rested the better.
Cheese filling
Grate the fetta using a course grater and crumble the ricotta cheese in a mixing bowl.
In a separate mixing bowl grate or break up the cream cheese.
Add the eggs, pepper, olive oil and milk together with the cream cheese and whisk with an electric beater.
Add the cream cheese mixture to the fetta and ricotta cheese and mix with a wooden spoon until smooth not runny. Add milk if too firm (see video).
Ensure the black pepper is visible, if not add more.
Assembling the Tiropites
Attach pasta machine to the bench or table and lay a table cloth on your working space.
Get two handfuls of dough and roll onto a floured board to approximately ½ cm in thickness or thin enough to put into pasta machine.
Start putting the pastry through on the thickest setting. On the imperia pasta machine we start with setting 1.
Cut the pastry in half and then continue rolling the filo to setting 3 and then 4.
The final setting 5 may need to go through once or twice depending on your machine but the pastry needs to be nice and thin (see video).
The longer the sheets are the better so you may need someone to help you with the filo sheets.
Once all sheets have been through each setting very gently stretch the sheets to allow to cut the sheet in half.
Using a pastry brush coat the filo pastry with melted butter and ensure the whole surface is covered.
Cut the sheet in half to make two thin sheets of pastry and then cut into 35-40cm in length.
Place ¾ of a spoon of the cheese mixture onto the top of each sheet.
Fold the pastry over the cheese mixture diagonally to form the triangle shape and continue until the end of the sheet.
It is important to make sure the fold is nice and tight so the mixture does not come out of the pastry when baking.
Continue all the steps until the dough is finished.
Storage and cooking
Storage
If you are not baking the tiropites it’s important before freezing to pre freeze on a tray with go between or a freezer bag.
Once the pastry and filling is firm, then place flat in a bag (each row in an individual bag) and in an air tight container in the freezer.
Cooking
To cook the tiropites place either olive oil or butter on the base of a non stick baking dish.
Place the tiropites in the pan and using a pastry brush cover the tops with olive oil.
Bake in a fan forced oven on 180oC fan forced until golden brown.
** Caution do not eat straight from the pan.. you will burn your mouth**
