1 x Lg or 2 small Savoy cabbages 8 x Strips bacon 1 x Salt and pepper 4 x Whole allspice berries 300 ml Bacon or chicken stock Cut the cabbage in half and boil for 15 minutes in salted water. Drain, and soak in cold water for 1 minute, then drain well and slice. Line the bottom of a casserole with half the bacon strips, then put the cabbage on top and add the seasonings. Add enough stock to barely cover, then put the remaining strips of bacon on top. Cover and simmer for an hour, until most of the liquid is absorbed.

This dish is an inspiration for my mother, who used to cook for me when I was a kid, coming home from school smelling the bacon and cabbage, in the kitchen with the turf smoking brought back so many memories for me. So for me to showcase this to everyone around the world and to bring back amazing memories, this is what it's all about with some amazing food.
Ireland has so much to offer in the food scene from beautiful fresh fish to all different cuts of meat, Irish beef some beautiful veg, but for me sometimes going back and cooking and all school dish like bacon and cabbage on Saint Patrick's Day with my twist by cooking it over fire. Many years ago with the grandparents and great grandparents they all used to cook over fire in their house, so this is one of the reasons I was using these parts that are up to 100 years old and this added such a special feel to when I was cooking the dish
So I just wanna say thank you so much Jamie, love you loads and thank you for all the inspiration throughout my career of being a chef.
