CARROT CAKE INGREDIENTS:
►2 cups all-purpose flour, *measured correctly
►1 cup granulated sugar
►1/2 cup packed light brown sugar
►2 tsp baking soda
►1 tsp baking powder
►1 1/2 tsp ground cinnamon
►1/2 tsp ground nutmeg
►1/2 tsp ground allspice
►1/4 tsp ground cloves, optional
►1/2 tsp fine sea salt
►1 cup vegetable oil, or extra light olive oil or canola
►4 large eggs, room temperature
►3/4 cup applesauce (or drained crushed pineapple)
►3 cups finely grated carrots (14 oz or 6 medium carrots)
►1 cup pecans, chopped, plus more to garnish, optional
►3/4 cup golden raisins, or regular raisins, optional

Banana Bread Recipe With Sour Cream | Award Winning Recipes | Cooking Up Love
This Banana Bread Recipe With Sour Cream is crazy delicious and it's golden delicious goodness topped with lemon icing brings home the blue ribbon every time! This is the best sour cream banana bread you'll ever have... inside it's fluffy, soft and moist, with a crisp crust on the outside. The rich banana flavor is just sweet enough, and to make it extra special, we like to top it with lemon icing and a touch of lemon zest.
Nothing smells better than fresh banana bread!! Let's put those spotty, ripe bananas to good use and bake up some amazing sour cream banana bread.
Banana Bread Recipe with Sour Cream Ingredients
2 cups of all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
2 - 3 large ripe bananas
1/2 cup softened butter
11/2 cups sugar
2 eggs
1/2 cup sour cream (or yogurt, or can substitute 1/3 cup add'l mashed bananas or applesauce)
1/4 cup milk
1 teaspoon vanilla
Banana Bread Recipe with Sour Cream Directions
Preheat the oven to 350 degrees, and butter and flour two loaf pans.
Measure out 2 cups of flour into a large bowl. Add 1 tsp baking soda, 1 tsp baking powder, 1/2 tsp salt and 1 tsp cinnamon, then whisk all of the dry ingredients together.
Mash 1 cup of ripe bananas, and set aside.
Beat 1/2 cup of softened butter with a mixer, until smooth and creamy. Add 11/2 cups of sugar and beat on medium high speed until light, smooth and creamy, this may take 3 - 5 minutes. Stop and scrape the sides and bottom of the bowl down a few times during the mixing.
Add the two eggs, one at a time, beating well after one and stopping to scrape down the bowl in between. Then add the bananas and beat.
Add the flour mixture, about a third at a time.
Add 1/2 cup sour cream, 1/4 cup milk and 1 tsp vanilla. If you don't have sour cream, you can substitute 1/2 cup of yogurt. Mix until just combined.
Spoon the batter into the prepared baking pan and bake for 45 - 55 minutes until a toothpick inserted in the center of the loaf comes out with just a few crumbs and the bread begins to pull away from the sides of the pan. Remove from the oven and place on a wire rack to cool for about 15 minutes. Then remove the bread from the pan and let cool. You can bake this recipe in one loaf, which will take longer, or in two smaller loaves, like I'm doing today. This sour cream banana bread will stay moist for a few days.
Lemon Icing for Banana Bread with Sour Cream
2 cups powdered sugar
3 - 4 tablespoons fresh lemon juice
Mix together, this will make a thick, but spreadable consistency. Use less powdered sugar (or more lemon juice) for a more runny icing.

So I just thought that I wasn’t a huge coconut cake fan, BUT this recipe CHANGED MY MIND! So much so that I would consider this coconut cake to be one of my new favourites – it’s that good!
This recipe consists of super soft and moist coconut cake layers, topped with an incredibly delicious coconut cream cheese frosting. It’s finished off with shredded coconut added to the outside of the cake which adds amazing texture to the cake – YUM!
INGREDIENTS:
Coconut Cake
- 2¼ cups (280 g) flour - regular, all purpose
- ¼ cup (30 g) cornstarch - also known as cornflour
- 1 tbsp baking powder
- ½ tsp salt - omit if using salted butter
- ½ cup (113 g) unsalted butter - room temp
- 3 tbsp unflavoured vegetable oil - I use canola oil
- 1⅔ cups (332 g) white granulated sugar
- 3 large eggs - room temperature
- 1½ tsps vanilla essence/extract
- 1 tsp coconut essence/extract - can substitute with 1/2 tsp almond essence/extract (see note 1)
- 1¼ cups (275 g) canned coconut milk
- 1 cup (80 g) shredded coconut - dried, also called threaded coconut
Bake at 160 °C (320°F) with the fan on for 33 minutes, or until a toothpick comes out clean. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F) ????
Coconut Cream Cheese Frosting
- 1 cup (225 g) unsalted butter - room temperature
- 4½ cups (570 g) icing sugar - also called powdered/confectioners sugar
- 1½ cups (335 g) cream cheese - cold, firm type (see note 2)
- 1½ tsps vanilla essence/extract
- 1 tsp coconut essence/extract - can substitute with 1/2 tsp almond essence/extract (see note 1)
- 1½ cups (120 g) shredded coconut - dried, for decorating (recommended for texture - see note 8). Also called threaded coconut

Very light, very elegant and delicious marble pound cake????. One piece will not be enough at all...
Ingredients:
2/3 cup unsalted soft butter (150 g)(1 1/4 sticks)
1 1/2 cups sugar (300 g)
1 tsp vanilla extract
4 large eggs
3/4 cup milk (180 ml)
2 cups all purpose flour (300 g)
2 tsp baking powder
pinch of salt
4 tbsp unsweetened cocoa powder to add on half of the batter
- Bake at 350 F/180 C for about 50-55 minutes or until a skewer inserted in the center comes out clean.
