How to make Blender Coconut Pie
My mother gave me this recipe many years ago and it is still a family favorite.
Blender Lemon Pie
Blender Lemon Pie is a very quick way to make a delicious pie. Throw all ingredients in the blender , put in shell and bake. However , make sure the lemon peels are totally ground up, or the bits of peel will be bitter when eating them. Flakes of peel are fine, pieces are not. I ended up with some in mine and it took away from the otherwise yummy pie taste.

Recipe:
4 large eggs
1// cup (1 stick) melted unsalted butter
1 lemon , cut into wedges, seeds removed
1 1/4 cup sugar
1 tsp vanilla extract
1 frozen pie shell
Powdered sugar , for garnish
Preheat oven to 350°
Place eggs, butter, lemon slices , sugar and vanilla in blender , pulse until mostly smooth ( make sure lemon pieces are pulsed into tiny pieces)
Pour lemon filling into frozen pie shell and bake for 45 minutes or until set.
Remove from oven , totally cool then dust with powdered sugar before serving

A simple and quick recipe, perfect for a picnic.
Ingredients: 3 eggs, 13 table spoon self-raising flour, 1 1/2 cup milk, 1 cup oil, onion soup and cheese. Blend everything and use whatever is available for the feeling. Enjoy!
