BROWN RICE MUFFINS ( Gluten-free)
Brown Rice Muffins
Hello friends!
As you noticed I make muffins pretty often as they are my kid's favourite. Today I went with a gluten-free option, which came out great!

INGREDIENTS
The recipe makes 11-12 muffins.
▪︎1 cup brown rice, soaked overnight
▪︎1 cup rolled oats, ground in a food processor or Vitamix
▪︎1 ripe banana
▪︎1 egg
▪︎1 tsp vanilla extract
▪︎1/4 cup coconut oil
▪︎1/2 cup maple syrup
▪︎1/2 cup yoghurt
▪︎1 tsp baking powder
▪︎1 tsp baking soda
▪︎1/2 tsp cinnamon
▪︎1/4 tsp cardamom
▪︎A pinch of salt
Let the batter sit for 30 minutes before baking.
Bake 5 min at 425F, then 30-40 mins at 350F.

Despite being Sugar, Gluten, and even dairy-free, these muffins are so easy and quick to make! You can make these muffins sweet or savory too! I like them savory without any sweetener, with some feta cheese, dill, and walnuts! I half them and toast each side to make them crispy too!

For 10-12 Muffins
Rice flour: 2 Cups/ 320g
Baking powder: 2 tsp
Oil: 1 Tbsp
Egg: 1 Large
Milk: 1 Cup/ 250 ml ( Dairy or plant-based)
Sweetener of choice: 6 Tbsp (add more if you want them sweeter. omit for savory.)
a pinch of salt/ vanilla

Preheat your oven to 180 C/365 F. Put your muffin or cupcake liners. (although I advise not to do so, just greasing the baking tin is enough because these muffins tend to stick to some papers!). Mix all of your wet and dry ingredients separately then add them together. do not over-mix. pour in the molds and bake for 20-25 minutes depending on your oven. let cool, then serve.
