For this recipe for example, make sure you're using fresh vegetables. It's best to buy them close to the time you use them. Also, always prefer fresh or frozen options over canned ingredients, since those tend to have higher concentrations of preservatives, sugar and sodium.
Why choose this recipe?
Rice paper is such a versatile ingredient to work with. You can put really anything in it – sweet or salty, and it works. The rice paper itself doesn’t have much of a flavor, so it serves as a wrapping that just holds everything together in a little roll full of anything you like. It also adds some carbs that make it more filling.
In this specific recipe, the filling includes tuna, which is high in omega-3 fatty acids, but low on overall fat. It's also very high in protein and varied minerals. Rice paper rolls recipe:
Preparation time: 10 minutes
Baking time: 30 minutes
Ingredients:
8 rice papers
100 grams of tuna
1/2 sweet pepper
A handful of olives
1/2 purple onion
1 stalk of spring onion
Pinch of salt
2 spoons of corn grains
Pinch of black pepper
Pinch of oregano
1 spoon of tahini
Instructions:
Chop bell peppers, spring onion, purple onion and olives.
Pour chopped ingredients, tuna, corn and tahini into a bowl.
Add oregano, salt and pepper.
Mix ingredients in the bowl.
Soften rice paper in water for 8-12 seconds and set on a dry towel.
Put a spoon of mixture on rice paper and fold.
Put rolls in a baking sheet.
Spread egg on rolls.
Spread sesame seeds.
Bake for 30 minutes.
Serve and enjoy!

Calories – 51.7
Hydro – 2.3 grams
Dietary fiber – 0.5 grams
Protein – 3.6 grams
Fat – 2.6 grams
You can eat just a few of these as a small snack, or more if you're looking for more of a filling meal. You can also make a big batch of these and keep them in the refrigerator to eat over the span of a few days.

In South Korea they are known as bapburgers (bap/bab means rice in Korean language). Instead of using buns for making the burger, we used shortgrain Korean rice; flavoured with seasoned seaweed and compressed into rice cakes. Then filled with flavourful tuna patty and assortment of greens and onions.
Rice with Tuna, Garlic & Parsley
Episode 3 giving a brilliant little recipe of tuna rice with garlic and parsley. Simply chop up some garlic cloves, parsley, red peppers and anchovies and add them to a pan full of butter. Cook for a few mins before adding the short grain rice. Stir and then add a glass of white wine. Let the wine cook out before you add the fish stock. Cook for 15 to 20 minutes until the rice is cooked and then simply stir through the can of tuna. I have to say that the smell and the taste was so much better than I was expecting!
