How To make Double Chocolate Peanut Butter Thumbprint Cookies
1 1/2 c All-purpose flour
1/3 c Baking cocoa
1 1/2 ts Baking powder
1/4 ts Salt
2 c Semisweet chocolate chips;
-divided 1 c Granulated sugar
1 c Chunky or smooth peanut
-butter - divided Not all-natural 1/3 c Butter or margarine; shof
1 1/2 ts Vanilla extract
2 Eggs
Recipe by: Nestles Combine flour, cocoa, baking powder and salt in small bowl. Melt 1 cup morsels in small, heavy saucepan over lowest possible heat, stirring constantly until smooth. Beat sugar, 1/3 cup peanut butter, butter and vanilla in large mixer bowl. Beat in melted chocolate. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in remaining morsels. cover; chill just until firm. Shape into 1-1/2" balls; press thumb into tops to make about 1/2" deep depressions. Place on ungreased baking sheets. Fill each depression with about 1/2 teaspoon peanut butter. Bake in preheated 350F oven for 10 to 15 minutes or until sides are set but centers are still slightly soft. Cool for 2 minutes. Remove to wire racks to cool completely. -----

I topped my cookies with a generous sprinkle of Malden’s sea saltflakes and they were just plain delicious. It added a lot of visual interest and those little bursts of salt were just the perfect accompaniment to the sweetness and peanut butter flavor in the cookies.

Makes 30

INGREDIENTS
405g NESTLÉ Aero For Baking Chocolate, broken into cubes
30g margarine
1⅔ cup cake flour
½ tsp baking powder
½ tsp salt
2 large eggs
¼ cup castor sugar
1 tsp vanilla essence
METHOD
1. Preheat the oven to 180°C and line a large baking tray with baking paper.
2. In the microwave, melt 225g of the NESTLÉ Aero For Baking Chocolate with the margarine.
3. Sieve the flour, baking powder and salt into a large bowl.
4. Beat the eggs, castor sugar and vanilla essence for 2-3 minutes until light and fluffy. Fold into the melted chocolate mixture. Fold the flour mixture in until just combined to form a dough.
5. Roll the dough into equal sized balls and place on the baking tray, using your thumb to flatten the centre of each. Bake for 10-12 minutes.
6. Remove from the oven and after 5 minutes when firmer, transfer the cookies to a cooling rack.
7. Melt the remaining NESTLÉ Aero For Baking Chocolate in the microwave and spoon a teaspoon into each cookie’s indent. Allow to set and ENJOY!

Thumbprint Cookies | Preppy Kitchen
Thumbprint cookies are the original no stress ready in a snap cookie. The bright colored jam filling reminds me of Autumn leaves and Christmas ornaments. I made these with a drizzle glaze but you can use chocolate, nuts or coconut flakes just as easily. Let me know which one you prefer!
I love that these cookies can be made with little ones, as long as they have extra clean hands! Some people will use a teaspoon to press the indent into the cookie but I think it's called a thumbprint cookie for a reason. The recipe for the sugar cookie base is super versatile by the way, also great for cut out cookies!
