How To make Apple Stuffed Pork Chops
1 tbsp onion
chopped
1/4 c butter or margarine
3 c soft bread cubes
2 c finely chopped apples
1/4 c celery :
finely chopped
2 tsp minced fresh parsley
3/4 tsp salt divided
6 pork loin chops :
1 1/2 inch thick
1/8 tsp pepper
1 tbsp cooking oil
In a skillet, saute onion in butter until tender. Remove from the heat; add bread, apples, celery, parsley and 1/4 tsp salt. Cut a large pocket in the side of each pork chop; sprinkle inside and outside with pepper and remaining salt. Spon stuffing loosely into pockets. In a large skillet, brown the chops on both sides in oil. Place in an ungreased large baking pan. Cover and bake at 350

Brown pork chops 3-4 minutes a side
Spray a 9x13 with cooking spray and spread the apple pie filling in the bottom. Place the browned pork chops on top and make the stuffing according to package directions and pile the stuffing on top of the chops. Cover with foil and bake 40-45 minutes. Enjoy with some roasted potatoes and a salad.

Apple-Stuffed Pork Chops
Add some cheesy potatoes and steamed green beans, and you've got a wonderfully satisfying meal
Ingredients:
1 cup diced, unpeeled apples
3/4 cup crushed Ritz crackers
1/2 teaspoon salt
1/4 cup finely chopped onion
2 tablespoons butter
3 tablespoons water or apple cider
4 to 6 thick, boneless pork chops
Directions:
Mix diced apples, crackers and salt in a mixing bowl. Saute onion in butter until the onion is tender. Add to the apple mixture.Stir in water.
Cut a slit into the fatty edge of the pork chop, without going completely through the other side, forming a pocket. Stuff each pocket with apple stuffing.
In a large, oven-proof skillet, brown pork chops on both sides. Cover the skillet and place in a preheated 350-degree oven. Bake for 45 to 60 minutes, until an instant-read digital thermometer reaches 155 degrees. Remove pan from oven and allow pork to rest for 10 minutes before serving. They will continue to cook and will reach an internal temperature of 160 to 165 degrees.
Sue's Tips:
Put Ritz crackers in a heavy-duty plastic zip-top bag. Seal the bag and roll over them with a rolling pin. Children love this job.
I like to use a large cast-iron skillet for browning the chops. It goes right into the oven and does a great job of evenly cooking the pork chops.
