Pomegranate Wild Rice Salad
Here is what you'll need!
Servings: 2-3
INGREDIENTS
Dressing ⅓ cup minced shallots ⅓ cup olive oil 1 tablespoon mustard 1 tablespoon lemon juice 1 teaspoon pepper 1 teaspoon salt ½ teaspoon lemon zest
Salad 3 cups water 1 cup wild rice 2 cups arugula 1 cup pomegranate seeds 1/3 cup pine nuts 1/4 cup feta cheese
PREPARATION 1. Whisk dressing ingredients together in a small bowl, set aside until ready to use. 2. Bring 3 cups of water to a boil. Add wild rice and bring back to a boil. Cover and let simmer for 45 minutes. Once all of the water has been absorbed, fluff rice and transfer to large salad bowl. 3. Allow the rice to come to room temperature so it doesn’t wilt the rest of the salad ingredients. 4. Add all salad ingredients to the salad bowl. Add as much dressing as you like, toss and serve. Top with more feta cheese (optional). 5. Enjoy!

Wild rice and chickpeas salad...so much goodness in one bowl!
This salad makes a great meal, especially for vegetarians.
1 1/2 cups long rain with wild rice, cooked and cooled 1 1/3 cup cucumber, cut into small pieces 1 1/4 cup kidney beans, drained and washed 1 cup chickpeas, drained and washed 1 cup carrots, grated 3/4 cup cilantro, finely minced 3/4 cup red onion, cut into short, thin slices 1/3 cup Muffuletta Olive Salad Add all the ingredients into a large bowl and stir well before adding the dressing
For the dressing you'll need:
4 tbsp Extra Virgin olive oil 2 tbsp lemon juice 1-2 tbsp Dijon mustard 1/2 tsp ground cumin 1 clove garlic, finely grated Salt and pepper
