How To make Wild Mushroom Soup (Minestra Di Funghi Selvatici)
Ingredients

dried porcini mushrooms, about 8 large pieces
3
medium
potatoes

small
carrots
1
medium
onion

shallot

mushrooms, wild, or cultivated fresh
2
ounces
bacon, 2 slices
10
tablespoons
olive oil
2 1/2
quarts
chicken broth, fresh made or canned chicken broth
1
teaspoon
salt
1/4
cup
parsley, minced flat-leaf, fresh
1
pepper, freshly ground
Directions:
PREPARATION: Put dried porcini mushrooms in a small bowl with 1/2 cup hot water. Let stand until softened, about 20 minutes. Remove mushrooms and strain liquid through a fine sieve.
Return mushrooms and liquid to the bowl; discard the sediment. Peel and coarsely shred the potatoes and carrots. Peel and coarsely chop the onion. Peel and mince the shallot.
Thinly slice the fresh mushrooms. Mince the bacon.
COOKING: Heat 5 tablespoons of the oil in a 6-quart soup kettle. Add the bacon and onions and saute over medium heat until the onions soften and the bacon is translucent, about 2 minutes.
Bring broth to a boil in a large saucepan. Add the boiling broth to the soup kettle along with the potatoes, carrots, porcini mushrooms, and reserved mushroom liquid. Return to a boil and simmer until vegetables are tender, about 10 minutes.
Heat remaining oil in a large skillet. Add the fresh mushrooms and salt and saute over medium until mushroom liquid has evaporated, about 10 minutes.
Add mushrooms to the soup kettle and simmer for 30 minutes. Adjust seasoning if necessary.
SERVING: Ladle soup into warm bowls. Sprinkle with parsley and ground black pepper. Serve immediately.

4# Mixed mushrooms
1 Onion diced
3-4 Oz. Chopped garlic
4 Oz. Butter
Fresh thyme chopped
2 Oz. Brandy
2 Oz. Olive oil
8 Oz. Heavy cream
1 Tbsp. Cayenne pepper
8 Cups Vegetable stock
1 Bunch leeks chopped
6. Oz. Flour
Sesame oil
Procedure:
1. In a large sauce pan heat the butter and olive oil over medium heat.
2. Add the onions, garlic, and leeks. Saute for about 5 minutes.
3. Add the mushrooms and cook for 10 minutes so they release their moisture.
4. Add the flour and cook for 1 minute. No longer than that as the roux will
lose it's thickening power.
5. Add the stock and cream and bring to a simmer.
6. Add the cayenne and fresh thyme. Continue to simmer for 25 minutes stirring
frequently. Season with salt to taste.
7. Remove 1/2 of the soup and place in a separate container. Puree using a hand wand
till smooth
8. Add the brandy and stir it in good.
9. Place a very small amount of sesame oil in a soup bowl and brush it all around
the inside of the bowl.
10 Ladle the soup in, garnish with fresh sprouts and serve.

This time we are going down to memory lane to discover an almost forgotten recipe which I used to enjoy every summer at my grandparents home. My late Grandma used to wake me up with this delicious dish on the cold rainy days. After my grandma passing, it has been many years since I have not eaten this soup.
I wanted to recreate this recipe as a celebration of her memory.
In order to make the same recipe I knew that I had to use only the best organic and fresh ingredients I could find.
Lucky for me it was not hard at all because in our area we still have good hard working people which are making organic dairy products.
If you want to try one the best dairy products from Bucovina, you should make a visit to the Bacania Fermei (in Campulung Moldovenesc), a small but lovely store filled up with all kind of organic and locally made goodies such as freshly made butter, yoghurt, sour cream and cheese made by Stana Bucovineana.
Ingredients used:
2 l of Organic Whey
250 g of organic Sour Cream
500 g of Wild Mushrooms
2 l of Water
Salt
Black Pepper
Mix of Spices (wild Thyme or regular Thyme, Bay Leaves)
Smoked Pork Ribs
2-3 Eggs
2 Onions
4-5 Garlig Cloves
Spring Onions
1-2 Carrots
1 Celery
1 Parsnip
1 Bell Pepper
1 Chilly

I'm using one kind of mushroom but you could mix and match your wild mushrooms.. this video I want to keep it simple and make it and make the mushrooms the star of the meal.
also I have kept it vegan but cream can be added or chicken stock can be substituted for veg stock

There is no recipe it depends on your taste but here's what I used
450 G Bay Boletus or any other kind of mushroom you like
200g Onions
20g Garlic
3 Bay Leaves
3 All Spices Berries
9 Whole Black Peppercorns
700 -900 ml Stock i used veg but you could use chicken
salt and pepper to taste
