How To make Western Beans& Rice
1 md Onion
chopped
1 c Sliced celery
1 tb Butter or margarine
32 oz Canned pinto beans*
:
drained and rinsed 1/2 ts Salt
8 oz Tomato sauce
1/8 ts Hot pepper sauce
1/2 c Water
3 c Hot cooked rice
Cook onion and celery in butter in large skillet until tender. Stir in beans, salt, tomato sauce, pepper sauce and water; heat thoroughly. Serve over hot rice. *Any type of bean may be substituted. Each serving provides: * 212 calories * 8 g. protein * 3 g. fat * 40 g. carbohydrate * 1 g. dietary fiber * 5

1 hot andouille sausage
3 celery stalk
1 teaspoon crab boil
1/2 green bell pepper
1 tablespoon minced garlic
1 tablespoon creole seasoning
1 teaspoon ground black pepper
1/2 tablespoon smoked paprika
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
2 tablespoons fresh parsley
6 cups of chicken broth
1/2 large red onion
2 tablespoons unsalted butter

New Orleans Red Beans & Rice with Michael's Home Cooking
Red Beans and Rice is a great tasting pot of beans! You will think you are in the Big Easy New Orleans.
Ingredients:
1 pound dried red kidney beans
2 smoked pork hocks
2 Tablespoons Worcestershire Sauce
3 chopped garlic cloves
1 large chopped onion (1 and 1/2 cups)
2 green bell pepper chopped (capsicum) 1 or 1 and 1/2 cups
5 celery ribs chopped (1 and 1/2 cups)
1 bunch of green onions chopped (1 cup)
2 Tablespoons butter (optional)
2 bay leaves
2 teaspoons hot sauce
1 pound andouille sausage, sliced
If you soak your beans overnight, then you only have to simmer for 2 hours instead of the 3, in the first phase before you add all the vegetables.
I like to serve with plain white rice for a complete meal.
