Tuna salad is a light and fresh comfort food classic. Made with a few simple ingredients it's an easy, flavorful and healthy lunch or dinner recipe.
Serve tuna salad in a sandwich, wrap it in lettuce, or stuff it in avocado halves for a healthy, throw-together meal. You really can't beat a classic tuna salad, and this version is the best! Enjoy!

Salad with Roasted Vegetables, Rye Bread and Truffle Dressing || Thanksgiving Menu || Gastro Lab

This salad is very flavorful and easy to make. You can cook it on grill if you like or use common oven. Perfect for meat and poultry.
Ingredients:
1 Eggplant
3 potatoes
3 Tomatoes
1 bell pepper
5 cm Leeks (white part)
15ml Olive oil
1 slice Rye bread
50 ml Truffle dressing (See the recipe at Gastro Lab)
Preparation:
Grease vegetables with olive oil. Bake in preheated to 200 C oven until cooked.
Peel vegetables. Cut potatoes in halves.
Break rye bread into pieces and add it to a salad.
Dress with truffle dressing. Garnish with fresh greens

Ingredients:
For the chicken:
1 Chicken breasts, skinless
1-2 tablespoons Oil
1/2 teaspoon Salt
1/2 teaspoon Pepper powder
1 teaspoon Chilli flakes
1/2 tea spoon ginger garlic paste
1/2 tea spoon thyme or parsley
For the salad:
1/2 cucumbers chopped
1onion, chopped
4-5 leaves Lettuce, chopped
1 medium tomato
2 to 3 olives
For the dressing:
1/4 cup Mayonnaise, low fat
1/4 cup Greek yogurt, low fat
1/2 tea spoon pepper powder
2 1 tea spoon apple cider vinegar
1/2 tea spoon Salt or as per to taste
1/2 tea spoon of parsley

RECIPE
1 Can of Chickpeas
1 Large Sweet Potato
1 Bell Pepper
2 Potatoes
1 Red Onion
2 Tablespoons Oil
Salt + Pepper
2 Handful of Greens
2 Teaspoons Wholegrain Honey Mustard
1 Tablespoon Balsamic Vinegar
2 Tablespoons Maple Syrup
Instructions
Drain the chickpeas and cut the vegetables into bite sized pieces and place on a baking sheet.
Alternatively if you have left over roast vegetables remove them from the fridge to come up to room temperature.
Drizzle over the oil and salt + pepper and use your hands to toss the vegetables to coat.
Place into a 200 Celsius or 400 Fahrenheit oven for 30-45 minutes or until the potato is tender and vegetables have some colour.
Leave to cool.
To assemble the salad mix together the mustard, balsamic, and maple syrup in a jar.
In a salad bowl add the greens and roast vegetables and pour over the dressing. Toss with salad servers and serve.
Notes
Use any vegetables you would like for this salad, it doesn't just have to be classic root roasting veggies.
If you have left over dressing try using it to marinade chicken or over a simple green salad.
