Recipe Turkey and Vegetable Burgers
Preparation method
Whole grain hamburger buns and condiments of your choice
1. Heat the olive oil over medium heat in a medium skillet and add the onion. Cook, stirring, until it begins to soften, about 3 minutes, and add the diced red pepper and a generous pinch of salt. Cook, stirring often, until the vegetables are tender, about 5 minutes. Stir in the garlic and the grated carrot and cook, stirring, for anther minute or two, until the carrots have softened slightly and the mixture is fragrant. Remove from the heat.
2. In a large bowl, mash the ground turkey with a fork. Add about ¾ teaspoon kosher salt if desired, and mix in the barbecue sauce, ketchup, and freshly ground pepper to taste. Add the sautéed vegetables and mix together well. Shape into 6 patties, about ¾-inch thick. Chill for 1 hour if possible to facilitate handling.
3. Heat a nonstick griddle or a large nonstick frying pan over medium-high heat and brush with a small amount of canola oil, or prepare a medium-hot grill. When you can feel the heat when you hold your hand above it, cook the patties for 4 minutes on each side. Serve on whole grain buns, with the condiments of your choice.
Yield: 6 burgers.

Turkey Vegetable Burgers
Are you looking at this turkey vegetable burger and wondering where the lettuce, tomato, and onion are? Well, to be honest, I forgot to buy them and I didn’t have enough time to go back to the store. There’s a plus side to my forgetful moment? I discovered that you don’t need all the extras.
This Turkey Vegetable Burger is filled with grated carrots, zucchini, garlic, dried oregano, smoked paprika, Worcestershire sauce white turkey meat and dark turkey meat. The combination of all of these ingredients makes for a healthy, flavorful turkey burger.

TURKEY VEGETABLE BURGERS
Serving Size: 6

Ingredients
1/4 cup red onion, finely diced
1 small zucchini, finely grated
1 carrot, finely grated
1 garlic clove, minced
1 teaspoon dried oregano
1 teaspoon smoked paprika
1 tablespoon Worcestershire sauce
1 teaspoon Kosher salt, divided
1/2 teaspoon ground black pepper
3/4 pound ground white turkey meat
3/4 pound ground dark turkey meat
1 tablespoon avocado oil
Hamburger Buns or Brioche Buns
Instructions
Prepare a baking sheet with parchment paper. Set aside.
In a large bowl add the vegetable mixture. Mix in the oregano, paprika, Worchestshire sauce, salt, and pepper. Add the ground turkey to the vegetables and mix well.
Form the turkey mixture into 6 patties. Arrange patties onto the prepared baking sheet. Lightly press the center of each patty with your thumb to make a small indentation. Cover the patties and chill for 1 hour.
Heat a grill pan or large cast iron skillet over medium-high heat. Brush the pan or skillet with avocado oil. Grill the turkey burgers for 5 - 7 minutes each side until they are fully cooked (160 degrees in a safe temperature).
Serve the turkey burgers on buns with your favorite condiments like ketchup, mustard, sliced tomatoes, and lettuce. Or ditch the bun and serve it with a simple green salad.
