How To make Turkey Breast Pinwheels
12 lg Flour tortillas
8 oz Pkg cream cheese; soft
1/2 c Butter or margarine; soft
1/4 ts Fresh lemon juice
1/4 ts Ground white pepper
Sprigs of fresh dill; or Dill pickles; cut thin -spears 1 lg Pk moist smoked salmon;
-thinly sliced Mix together cream cheese, butter, pepper, and lemon juice. (I do this in the food processor). Spread the tortillas, one at a time, with this mixture. Lay the smoked salmon slices, slightly overlapping, over the cream cheese mixture, leaving one edge of the cream cheese uncovered (this acts as the "glue" to hold the tortilla together when rolled.) Lay fresh dill sprigs or dill pickle spears down one edge; starting with this edge, roll up tightly, "gluing" tortilla together at the end with the uncovered edge of cream cheese. Wrap tightly in plastic wrap and chill, at least one hour or up to 24 hours. When ready to serve, unwrap and slice about 1/2" thick on a slight diagonal. TURKEY brEAST PINWHEELS WITH SUNDRIED TOMATO SPREAD Same as above, except substitute very thinly sliced turkey breast for the salmon, omit lemon juice from cream cheese mixture and add 1/4 cup oil packed sundried tomatoes, finely chopped; use watercress in place of dill. You may have tortillas left over, use the amount of spread for each which gives a uniform covering with no tortilla showing through, but also not to thick!! If you like capers, they are wonderful added to the spread for the Salmon pinwheels. (wrv)

Pesto Turkey Pinwheels
Ingredients (for 10 servings)
● 2 large flour tortillas
● ¼ cup pesto (55 g), divided
● 1 cup cherry tomato (200 g), halved, divided
● ½ lb turkey (225 g), sliced, divided
● 2 oz baby spinach (55 g), divided
● 4 slices provolone cheese, halved

Preparation
Warm the tortillas in the microwave in 30-second intervals, until flexible. Transfer to a clean work surface.
Spread on half the pesto on each tortilla.
Divide the tomatoes, turkey, spinach, and provolone between the tortillas.
Wrap the tortillas tightly in plastic wrap and rest for 30 minutes.
Stick 6 toothpicks 1-inch (2.5 cm) apart into the wraps along the seam.
Slice between the toothpicks and serve.

Light, easy to make and delicious. These wraps are perfect for lunches, or meals in a hurry.

Ingredients for 5 people:
5 wraps
10 slices of turkey breast - finely chopped slices.
1 bag of lettuce, washed and ready to eat (4 seasons)
1 package of cream cheese (India)
1 cup of remoulade
A little tomato sauce
Sambal Oelek
Lay out the wraps and spread them with ‘India’ cheese. Make sure you leave a 2-cm edge bare around each pancake. Put the 4-seasons salad mix on top. Add some remoulade to the salad. Then, arrange 2 slices of turkey breast on each pita bread. In a bowl, mix a little tomato sauce with sambal oelek and spread on the turkey breast slices. Wrap the pita breads carefully.
They can be served as an appetizer whole, or sliced as finger food.
