How To make Thai Ham and Chicken Salad
Stephen Ceideburg
DRESSINGS:
1/2 Chinese cabbage, shredded
2 Carrots, grated
1 Capsicum pepper, cut into
Thin strips 2/3 lb Cooked chicken meat,
Shredded 3 1/2 oz Ham, finely sliced
1 Birdseye chilli, finely
Chopped 2 cl Garlic crushed
2 tb Lime (or lemon), juice
2 tb Dark soya sauce
1/2 c Flaked almonds, lightly
-Toasted Bring a large pot of water to the boil and have ready a sink full of icey-cold water. Plunge the shredded cabbage into the boiling water for one minute then scoop it out and into the cold water. Drain and dry the cabbage and arrange it and the other vegetables in sections or concentric rings for maximum decorative value on a large serving dish. Fill the centre of the arrangement with chicken and ham. Decorate the dish with bright red chilli "flowers" (optional). Pass the dressing separately. From "Raw Materials" by Meryl Constance, Sydney Morning Herald, 12/22/92.
[The chilli "flowers" can be easily made by slitting long, thin, hot chillies lengthwise from near where the stem attaches and then tossing the slit chillies into a bowl of ice water and ice cubes. The "petals" will curl back and make an attractive garnish. Make about eight slits. S.C.]

Chicken Lettuce Wrap Recipe - Pai's Kitchen
This recipe is an easy and fun appetizer (or even dinner) to make! It's inspired by the lettuce wrap I get in Chinese restaurants that is made from the meat of Peking duck. With five-spice powder, hoisin sauce, crunchy water chestnuts and crisp iceberg lettuce, it was an instant hit!

This awesome Thai chicken salad uses toasted rice flour to make a simple sauce that really helps divinely deliver the flavors of the salad onto your palate.
The recipe uses a number of fresh veggies which is always a health benefit.
This salad is a great change-up to the mainstream chicken salad which we all know is made with fattening mayonnaise. :(
Ingredients
1 pound chicken (ground)
½ cup water
Fish sauce
Lime juice (not from the bottle, fresh please)
2 large shallots (peeled, finely sliced lengthwise)
1 tablespoon toasted rice powder (also known as roasted rice powder and is available in Asian grocery stores if you do not see it in your neighbourhood store)
Ground dried red pepper
⅓ cup mint leaves
½ cup whole cilantro leaves
Thai Chicken Recipe Ingredients:
Directions
1) On medium heat sauté the chicken until it is thoroughly cooked (don't brown please). Liquid should remain in the pan but you can add water if you dry out the chicken.
2) Take the chicken off the heat and add the shallots straight away. Smoothly stir to heat and wilt the shallots.
3) Add 1 tablespoon of fish sauce and 1 tablespoon of lime juice. Toss the whole recipe and taste. Add additional lime juice in 1 tablespoon increments and additional fish sauce in 1 teaspoon increments until you reach a taste you like.
4) Now add the toasted rice powder and toss again.
5) Slowly and cautiously add dried chili powder, then toss, and taste once more. Again, add in increments until you are happy.
6) Toss with the mint leaves and cilantro.
7) Enjoy the salad on a bed of dark green leaves.
