Mango Ginger Chutney (Unreal Trader Joe's Copycat Recipe!)

It can be used right away, or even better, preserved for use at a moment’s notice. It’s super handy when you want a quick dinner on the table!

Mango Chutney Ingredients:
6 cups diced mango (fresh or frozen)
2 cups granulated sugar (see notes if you are NOT canning)
¾ cup golden raisins
½ cup red bell pepper (diced)
½ cup onion (diced)
1 tablespoon freshly grated ginger
½ cup apple cider vinegar
½ teaspoon sea salt
¼ teaspoon red pepper flakes
Add the ingredients to a large saucepan. Place the saucepan over medium-high heat and bring the mixture to a boil. Once it starts to bubble, reduce the heat to medium and simmer until it starts to thicken. Make sure to stir frequently to prevent the bottom from burning. It should take 20 minutes.
Canning Instructions
Process chutney: Pour hot chutney into hot jars, leaving ¼-inch headspace. Wipe rims of jars with a dampened clean paper towel to remove residue, place a lid on the jar and screw a ring on until finger-tight. Process in a boiling water canner according to the following altitudes.
0-1,000 ft above sea level = 10 min
1,001-3,000 ft above sea level = 15 min
3,001 - 6,000 ft above sea level = 20 min
6,001 - 8,000 ft above sea level = 25 min
8,001 - 10,000 ft above sea level = 30 min

Mango Chutney Recipe | Sweet and delicious spiced chutney
This is a great little homemade mango chutney using some whole spices to get little pops of flavour throughout. So simple to make and doing it from scratch allows you to get the flavour that works best for you. This is my favourite mix but have a play around with your own. Can be made spicy or mild.
Goes wonderfully with poppadoms or with my smoked mackerel kedgeree
Ingredients
makes 400ml
600g whole mangoes or 300g cubed
1 garlic clove
1 tbsp chopped fresh ginger
1/2 fresh red chilli
1/2 tsp cumin seeds
1/2 tsp ground coriander
1/4 tsp ground turmeric
1/4 tsp fennel seeds
1/4 tsp salt
100ml white wine vinegar
250g caster sugar
1 tbsp vegetable oil

Sweet Mango Chutney - 30 Mins
Chutney is simple and easy to make and a great way to enjoy mangoes in season. This sweet mango chutney takes less than 10 minutes to prep and 30 minutes to cook. You can add it to your favorite meat or roast to enhance the flavor. It is also the best sandwich spread you will ever taste.

Mango Chutney Recipe - Mark's Cuisine #21

A good Mango Chutney Recipe is sweet, spicy and full of flavor! This recipe is so easy you will never have to buy one again. It is so versatile you can add it just about anything.
Makes approx. 4 Cups
Ingredients
165ml (2/3 cup) white wine vinegar
(or alternatively 100ml of vinegar and 65ml of lemon juice)
100g (1/2 cup) brown sugar
1 onion, finely diced
4 cloves garlic, peeled
1 tbs fresh ginger
4 mangoes, peeled and slice
5 cardamom pods bruised (optional)
3 cloves (optional)
1 cinnamon stick (optional)
Chilli to taste (optional)
Directions
Prepare the mangos by chopping them into 1 1/2cm cubes
Chop the onions, finely chop or grate ginger and garlic and bruise the cardamom pods.
Add Vinegar and/or lemon to a saucepan with ginger, garlic, onions, spices and sugar, then bring to a simmer and leave for 30 minutes or until the liquid has reduced by half.
Next add the mangos and bring back to a simmer. Cook it for another 5 minutes, turn the heat off and let the Mango chutney cool, then place it in some sterilized jars.
This Mango chutney can be served with curries and rice and when spread on sandwiches it just lifts the sandwich to another level.
