How To make Mango Chutney 2
3 lb Fresh firm mangoes
1 1/2 lb Brown sugar or jaggery
3/8 lb Peeled garlic cloves
3/8 lb Fresh ginger finely chopped
4 oz Sultanas
4 oz Raisins
2 tb Salt
SPICES:
1 tb Ground cummin
1 tb Ground coriander
1 tb Chilli powder
1 ts Cloves ground
Peel the mangoes and slice, retaining all the juice. Put the mango slices in a pan with just enough water to cover and bring to boil. when simmering add sugar and extra water if necessary to prevent sticking. Puree the garlic, ginger, rasins and sultanas, then add the spices. When the mango reaches a jam like consistency, add the puree and the salt. stir and allow to simmer, adding water if needed. When it thickens sufficiently, remove from heat. Cool and bottle. Leave for a minimum of 4 weeks before serving.

Mango Chutney Recipe - Mark's Cuisine #21

A good Mango Chutney Recipe is sweet, spicy and full of flavor! This recipe is so easy you will never have to buy one again. It is so versatile you can add it just about anything.
Makes approx. 4 Cups
Ingredients
165ml (2/3 cup) white wine vinegar
(or alternatively 100ml of vinegar and 65ml of lemon juice)
100g (1/2 cup) brown sugar
1 onion, finely diced
4 cloves garlic, peeled
1 tbs fresh ginger
4 mangoes, peeled and slice
5 cardamom pods bruised (optional)
3 cloves (optional)
1 cinnamon stick (optional)
Chilli to taste (optional)
Directions
Prepare the mangos by chopping them into 1 1/2cm cubes
Chop the onions, finely chop or grate ginger and garlic and bruise the cardamom pods.
Add Vinegar and/or lemon to a saucepan with ginger, garlic, onions, spices and sugar, then bring to a simmer and leave for 30 minutes or until the liquid has reduced by half.
Next add the mangos and bring back to a simmer. Cook it for another 5 minutes, turn the heat off and let the Mango chutney cool, then place it in some sterilized jars.
This Mango chutney can be served with curries and rice and when spread on sandwiches it just lifts the sandwich to another level.

What's great about this chutney is that it hits all of the flavour profiles - sweet, sour, bitter, salty, and spicy! It works great as a dipping sauce, flavourful vegan spread for rice cakes and wraps, or more traditionally as a side in a south Indian meal!

Easy Mango Chutney Recipe / Swahili Style

Raw Mango
Ripe Mango
Green and Red Chili. If you can't find red, green is fine too
Garlic
Coriander
Salt to taste
Put everything in a food processor or blender and process till you get the desired consistency.
That's it and you're done. Super easy and fast, yet sooo delicious.
