How To make Summer Cooler Cake
13 ozs angel food cake
9 ozs strawberry gelatin powder
3 c boiling water
2 c cold water
34 ozs fruit cocktail in syrup -- drained
Dissolve gelatin in boiling water. Add cold water. Spread 1 cup fruit cocktail in bottom of 12-cup fluted pan. Pour in 1 1/2 cups gelatin mixture. Brush crumbs off cake and place topside down, over fruit and gelatin, pressing down lightly. Spoon remaining fruit cocktail around side of cake. Pour remaining gelatin over cake. Chill until firm, four hours. Unmold and serve.

Camilla Hamid’s Swedish strawberry cake
Serves 24
Cake base
100 g butter, softened
1½ dl white sugar
5 egg yolks
2½ dl flour
2 teaspoons baking powder
1 tbsp vanilla sugar
1/2 dl milk
Meringue
5 egg whites
2¼ dl sugar
50 g flaked almonds
Filling
5 dl heavy cream
600 g cream cheese
2 dl powdered sugar
zest from 2 lemons
1kg fresh strawberries
Instructions
Set the oven to 150° C.
Cream together the butter and sugar until light and fluffy. Then add one egg yolk at a time while continuously whisking.
Add flour, vanilla sugar and baking powder through a sift and carefully fold in these dry ingredients with a spatula. Then add the milk and fold that in too.
Spread the batter onto a well-greased piece of parchment paper on a baking sheet.
In a clean bowl with clean beaters, beat the egg whites into a firm foam. Then add the sugar little by little, while continuously whisking until you get a thick and shiny meringue.
Spread the meringue on top of the cake batter and sprinkle with flaked almonds.
Bake for about 30-40 minutes in the middle of the oven. Afterwards, let it cool completely on a wire rack. Then cut the cake into two layers and remove the baking sheet.
While the cake cools you, make the filling by whisking together heavy cream and cream cheese until thick and creamy. Sift in powdered sugar and fold it in gently into the filling with a spatula. Finally, add lemon zest for flavour and fold that in too.
Clean and cut your strawberries. Spread out half of the filling on the first layer of the cake. Add half of the strawberries, then top with the second layer, more filling and lastly a lot of strawberries.

This classic French cake is made with moist vanilla cake layers, filled with smooth mousseline cream and packed with tons of fresh strawberries.

FRESH STRAWBERRY CAKE | FRAISIER CAKE Printable Recipe –
INGREDIENTS FOR THE CAKE BATTER:
3 large eggs
110g sugar
50g melted butter
100g flour
1 tsp vanilla extract
1/8 tsp salt
INGREDIENTS FOR THE FILLING:
500 ml whole milk
200g sugar
4 large eggs
50g cornstarch
8g gelatin powder
50 ml water
200g softened butter
1 tsp vanilla extract
800-900g fresh strawberries
INGREDIENTS FOR THE SIMPLE SYRUP:
100 ml water
100g sugar
2 tsp lemon juice
1 tsp vanilla extract
NOTES:
All the ingredients need to be at room temperature.
If you don’t have a stand mixer, heat the eggs in a large heat proof bowl until the sugar has dissolved, remove it from the heat and whisk it with a hand mixer for about 10-15 minutes.
I want to bring to your attention that the butter should also be at room temperature, so don’t forget to take it out of the fridge a couple of hours before you start making the filling.
You can assemble the cake any way you like.
Store the cake in the refrigerator up to 2 days.
