How To make Spinach/Cheese Stromboli
1 pk Yeast
2 lb Ricotta
2 ts Sugar
1 pk Spinach, frozen chopped
-(cooked) 1/3 c -Warm water
4 c Flour
1 c Parmesan
3 tb Butter; in pieces
1/2 lb Mozzarella, sliced
1 ts Salt
2 tb Butter; melted
1 c -Ice water (without cubes)
Sesame seeds Preheat oven to 200 degrees for 15 minutes and turn off. Combine yeast, sugar and warm water in a small mixing bowl. Set aside for 5 minutes until foamy. In the workbowl of a food processor, add flour, butter pieces and salt. Process for 20 seconds. Add ice water to yeast. With the processor running, add yeast-water mixture gradually, until all of the moisture is absorbed and the dough leaves the side of the bowl. Process for an additional 60 seconds. Transfer dough from the workbowl to a large greased mixing bowl. Cover with a kitchen towel and place in warm off oven. Allow to rise until doubled, approximately 1-1/2 hours. In a medium mixing bowl, combine ricotta, spinach and parmesan cheese. Punch down the risen dough and transfer to a floured rolling surface. With quick, hard strokes, roll dough into a large rectangle, approx- imately 1/2 inch thick. Layer one-half of the mozzarella cheese evenly down the center leaving approximately three inches of exposed dough on either side. Top with ricotta-spinach mixture and the remaining mozza- rella. Overlap the exposed dough over the cheese mixture and pinch well on all sides to seal. Transfer to a large cookie sheet, seam side up. Cover with a kitchen towel and return to the warmed oven. Allow to rise until doubled, ap- proximately 45 minutes. Brush loaf with melted butter and sprinkle with sesame seeds.
Bake at 350 degrees for 35 to 40 minutes or until loaf is well browned and hollow sounding when thumped. --- Diane Simms

Keto Stromboli with spinach and queso fresco!
Dough
1.5cups low moisture part skim shredded mozzarella.
2/3cup almond flour
1 tsp baking powder
1 TBLS Italian seasoning
Filling
Spinach about 1 cup when cooked
Minced garlic to taste
Onion powder to taste
Queso fresco 2-4oz (or your preferred crumbly cheese such as feta)
Melt mozz for 60-90 seconds until consistency is like taffy. Add remaining ingredients, mix to combine.
Lay out dough on silicon mat or parchment paper. Roll into a rectangle. Set dough aside.
Lightly cut up a few handfuls of fresh spinach. In a non-stick skillet on the stove cook down spinach with some minced garlic and onion powder to taste. Add a little avocado oil if needed to prevent sticking.
Transfer spinach to a bowl, squeeze spinach to remove the liquid. You can use a cheese cloth, I used paper towels and it worked well for me.
Once the liquid is removed, place the spinach down the center of the dough.
Top spinach with hard/crumbly cheese of choice. I prefer Queso Fresco but you can use feta or other crumbly cheese of choice.
Slice dough at a slight angle about 1.5” apart going up each side from outside to the spinach mixture. Next, start weaving dough slices from bottom to top.
Ovens vary, I baked mine at 350F for 12-14 minutes.

Cooking Italian with Lydia Vigna Kehoe: Stromboli with Spinach and Cheese
Stromboli is the perfect comfort food! Especially this recipe filled with mozzarella. parmesan, spinach, onion, basil, and garlic. The homemade dough adds the perfect touch!
Ingredients:
Dough:
3/4th cup very warm water
1 tbsp granulated sugar
1 1/2 tsp active dry yeast
2 cups all purpose flour
1 tsp olive oil
1/2 tsp salt
Filling:
3 tbsp olive oil
1 tbsp garlic
1/2 cup chopped onion
1 cup chopped spinach
2 cups shredded mozzarella
1/2 cup grated parmesan
1 tbsp freeze dried basil
1 tsp pepper
Topping:
Brush dough with olive oil
Directions:
1. Combine warm water, sugar, and yeast for about 10 minutes and/or bubbly.
2. Combine salt and flour in a separate bowl.
3. Mix yeast and flour combination in a bowl. Fold dough for 5-7 minutes, then place in a separate oiled bowl for one hour. Cover with cloth.
4. Sizzle 3 tbsp olive oil, then basil, garlic, onions, and spinach for approximately 3 to 4 minutes. Remove from heat.
5. Lightly flour counter surface and place dough on surface. Roll out dough to a rectangle with 1/4th inch dough thickness.
6. Cover dough rectangle with the onion and spinach mix - leave 1/2 inch space along perameter.
7. Cover dough with mozarrella and parmesan cheese.
8. Roll dough lengthwise. At the next to last roll, tuck sides under and tuck lengthwise crease under the stromboli.
9. Brush the stromboli with olive oil.
10. Cook in oven on 400 degrees for approximately 15/20 minutes.
11. Enjoy with a side of sauce!

1️⃣ 00:00:14 - In bowl of stand mixer whisk together water, sugar and yeast. Add in flour and salt and with dough hook mix on medium speed just until dough comes together.

3️⃣ 00:01:00 - Preheat oven to 400. Turn dough out onto lightly floured piece of parchment paper and roll out into a large rectangle.
