3 Garlic cloves, peeled
1 md Onion; quartered
3 lg Tomatoes
1 Canned chipotle chile in ado
-bo 1/4 c Lime juice
2 tb Salad oil
1/4 c Fresh cilantro leaves, chopp
-ed Recipe by: rec.food.cooking - Stephanie da Silva Place a 10 to 12 inch uncoated frying pan over high heat. Add garlic, onion, and tomatoes. Cook, turning often with tongs, until charred on all sides (about 10 minutes). Remove from pan and let cool. Cut tomatoes in half crosswise and discard seeds. Smoky Roasted Salsa
Charred vegetables and canned tomatoes give this salsa a deep roasty flavor. While some homemade salsas come out watery, the techniques used in this recipe solve that problem. Use this salsa as a dip for chips, a topping for an OAMK ChipPile, or add it to OAMK Little Turkey Burritos. You can find the full recipe at my website:
To make this special salsa, start with drained whole canned tomatoes. Roast tomatillo, onion, jalapeño, and garlic with one dried guajillo chile to give the salsa a roasty flavor. Remove the seeds from the guajillo; taste the jalapeño and decide if the seeds should be removed from it too. To keep it chunky, chop everything and blend half. Add salt and cilantro to taste. Serve with chips or use it as an ingredient in another dish.
