2tbsp of dried parsley (optional)
3tbsp of unsalted butter
1tsp of black pepper

1cup of heavy milk

Creamy Chicken & Mushroom Stuffed Crepes
Serves 7-8
Recipe in English:
Ingredients:
Prepare Chicken:
-Cooking oil 2 tbs
-Chicken strips 500g
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Kali mirch powder (Black pepper powder) ½ tsp
-Namak (Salt) ½ tsp or to taste
-Dried parsley 1tsp
-Lemon juice 1 tbs
Prepare Creamy Mushroom Sauce:
-Makhan (Butter) 2 tbs
-Cooking oil 2 tbs
-Pyaz (Onion) chopped 1 medium
-Mushrooms sliced 1 Cup
-Maida (All-purpose flour) 1 tbs
-Yakhni (Stock) 1 Cup
-Olper’s Dairy cream 200ml (room temperature)
-Lal mirch (Red chilli) crushed 1 tsp
-Namak (Salt) 1 tsp or to taste
-Kali mirch (Black pepper) crushed 1 tsp
-Lehsan powder (Garlic powder) 1 tsp
-Dried thyme ½ tsp
-Dried parsley 1 tsp
Prepare Crepes:
-Anday (Eggs) 3
-Doodh (Milk) 1 Cup
-Water ½ Cup
-Namak (Salt) 1 tsp or taste
-Maida (All-purpose flour) 1 & ½ Cup
-Cooking oil 3 tbs
Assembling:
-Hara dhania (Fresh coriander) chopped
-Cheddar cheese grated
-Mozzarella cheese grated
-Lal mirch (Red chilli) crushed
-Dried parsley
Directions:
Prepare Chicken:
-In a wok,add cooking oil,chicken & mix well until it changes color.
-Add ginger garlic paste & cook for a minute.
-Add black pepper powder,salt,dried parsley and lemon juice,mix well and cook on medium flame until light golden (2-3 minutes) then take out in bowl & set aside.
Prepare Creamy Mushroom Sauce:
-In the same wok,add butter,cooking oil & let it melt.
-Add onion & sauté for a minute.
-Add mushrooms,mix well and cook for 2-3 minutes.
-Add all-purpose flour and mix well for a minute.
-Add stock,mix well and cook for a minute.
-Add olper’s cream,mix well & cook for 2 minutes.
-Add red chilli crushed,salt,black pepper crushed,garlic powder,dried thyme and dried parsley,mix well & set aside.
Prepare Crepes:
-In a bowl,add eggs & whisk well.
-Add milk,water,salt & whisk well.
-Gradually add all-purpose flour & whisk well until smooth.
-Add cooking oil & whisk well.
-Grease 9” inch frying pan with cooking oil,add 1/3 cup of prepared batter,spread evenly & cook on low flame from both sides until light golden.
Assembling:
-Place crepe on a clean working surface,add prepared chicken,prepared creamy mushroom sauce,fresh coriander and fold the crepes into a roll (makes 7-8).
-Place stuffed crepe rolls in a baking dish,add cheddar cheese,mozzarella cheese,red chilli crushed & dried parsley.
-Bake in preheated oven at 180 C until cheese melts (10 minutes).

-Kali mirch powder,namak,dried parsley aur lemon juice dal ker ache tarhan mix karei aur darmiyani ancch per light golden ho janay tak paka lein phir bowl mein nikal ker side per rakh dein.

-Us he karahi mein makhan aur cooking oil dal ker melt ker lein.
-Pyaz dal ker ek minute kliya saute karein.
-Mushrooms dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Maida dal ker ek minute kliya ache tarhan mix karein.
-Yakhni dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Olper’s cream dal ker ache tarhan mix karein aur 2 minute kliya paka lein.
-Lal mirch crushed,namak,kali mirch crushed,lehsan powder,dried thyem aur dried parsley dal ker ache tarhan mix ker lein & side per rakh dein.
Prepare Crepes:
-Bowl mein anday dal ker ache tarhan whisk ker lein.
-Doodh,pani aur namak dal ker ache tarhan whisk karein.
-Thora thora ker ka maida shamil karein aur smooth hunay tak ache tarhan whisk ker lein.
-Cooking oil dal ker ache tarhan whisk ker lein.
-9” inch frying pan ko cooking oil sa grease karein aur 1/3 cup tayyar batter dal ker evenly pheela lein aur halki ancch per dono sides sa light golden hunay tak paka lein.
Assembling:
-Clean working surface per crepe rakh dein,tayyar chicken,tayyar creamy mushroom sauce aur hara dhania dal ker crepe ko fold ker ka roll ker lein (makes 7-8).
-Baking dish mein stuffed crepes roll rakh dein,cheddar cheese,mozzarella cheese,lal mirch crushed aur dried parsley dal dein.
-Preheated oven mein 180 C per cheese melt hunay tak bake ker lein (10 minutes).
SAVORY CREPES WITH A CHICKEN MUSHROOM FILLING TOPPED WITH A BECHAMEL SAUCE

BELOW ARE THE INGREDIENTS FOR EACH STEP IN THE PROCESS
CREPE BATTER
1 3/4 cup all purpose flour
1/2 Tsp. Salt
2 1/2 cups milk
2 eggs
4 Tbsp. Melted butter
1 Tbsp. Fresh dill minced
Whisk flour and milk first to prevent lumps in the batter.
Beat 2 eggs well. Then pour into batter mixture and whisk.
Melt butter then add butter, salt and dill. Whisk well. Set aside so air bubbles
can escape.
To make crepes,
Oil skillet then wipe out with a paper towel.
Heat skillet to 400°F. Add batter using a 3 ounce ladle or a comparative measuring cup.
Roll batter around until the bottom of the skillet is full to the sides with batter.
Cook on a medium heat for 2-3 minutes or until the bottom of the crepe is browned.
Flip the crepe over gently. Cook for 1 minute and reserve.
Repeat this until you have made as many crepes as you want. Refrigerate the ones you don't use.
FILLING
Rotisserie chicken remove meat
1 Large Leek sliced cleaned and chopped
2 Tbsp. Butter
Salt & Pepper
2 1/2 cups thinly sliced mushrooms
1 Tsp. Worcestershire sauce
1 Tbsp. fresh minced parsley
1/4 cup white wine or less if you wish (Dry White Wine)
1 Tbsp. minced garlic
Grape Seed Oil
Sauté’ leeks, mushrooms, garlic and parsley in butter and a grape seed oil.
Add Worcestershire sauce and white wine. Sauté until soft. Add chicken. Fold in well.
Reserve
BÉCHAMEL SAUCE
2 Tbsp. butter
1/2 Tbsp. minced garlic
2 Tbsp. flour
2 1/3 cup milk
Salt & Pepper
Melt butter, add flour and make a roux. Add milk. Whisk until milk is well incorporated.
Add salt and pepper to taste.
Reserve in a squeeze bottle
FINAL ASSEMBLY OF CREPES
Roll out a crepe over the crepe dish.
Fill with chicken and mushroom filling
Add béchamel sauce.
Roll crepe and drizzle on more béchamel sauce.
Cover with gruyere or baby swiss cheese
Bake 350° F 10-12 minutes
Broil to brown cheese
Top with chives.
Serve.

A super tasty mushroom sauce I used to make at my French restaurant. And you don’t have to be a Chef to make this one, it’s so easy. Any true French person will always tell you, a protein needs sauce!
First, you slice up 500 grams of assorted mushrooms, any kind you like. A mixture makes it more interesting. Then, you add dried porcini mushrooms, which are the Chef secret flavour boosters. A little red wine, homemade chicken or beef stock and herbs. And of course, in true French Cheffy style, finish with cream and butter.
When you cook all of this together, it's like creating a delicious story in your kitchen. This sauce isn't like ordinary sauces, it's the secret to making your food taste out-of-this-world.
Another Chef secret, before adding the butter, let it simmer on a back burner ever so gently for 20 minutes or even longer. The sauce will be glossier and intensify the flavour even more!
