Tuscan White Bean and Kale Soup Ribollita
This Tuscan white bean and kale soup is a hearty variation of the very famous ribollita, a classic Italian recipe usually made with stale bread. My vegan-friendly version has the bread on the side, ready to be dunked in the delicious broth!

‘Tis the season for soup! (Not that I need an excuse to make soup, but it tastes better when it’s cold outside.) This recipe is both super yummy and sneakily healthy, so grab your biggest soup pot, put on some cozy music (or an audio book), and I’ll see you in the kitchen.

Recipe:
-1 package of smoked sausage, chopped into small pieces
-1 Rotisserie Chicken, pulled and chopped
-2 cartons of chicken broth
-4-5 cloves of garlic, minced
-1 tsp salt, more to taste is desired
-1/2 tsp pepper, more to taste is desired
-2 tsp onion powder
-2 cans white canelli beans
-juice from 1/2 lemon
-1/2 cup heavy cream or coconut cream
-1 head of tuscan kale
Heat 1 tsp of olive oil in your soup pot. Chop and saute sausage with minced garlic until browned. Add chicken, chicken broth, and seasonings. Bring to a boil. Drain & rinse your beans, then add beans, lemon juice, cream and kale. Adjust seasonings to taste. Let simmer for about 10 minutes. Enjoy!

Sausage, Potato & Kale Soup - Pioneer Woman Recipe!
Sausage, Potato, and Kale Soup
Ingredients:
• 1 ½ pounds Italian sausage
• 1 large onion, diced
• 3 cups whole milk
• 2 cups half-and-half
• ¼ cup cream
• 4 cups low sodium chicken broth
• ½ teaspoon dried oregano
• ½ teaspoon red pepper flakes
• Salt and pepper to taste
• 8 to 10 medium red potatoes
• 1 bunch of kale, stalks removed, torn into bite-sized pieces
Directions:
• In a large pot over medium high heat, saute the Italian sausage with the onion. Cook until the sausage is completely cooked (about 5-7 minutes). Drain off the excess fat then pour the mixture onto a baking sheet lined with paper towels in order to remove as much fat as possible.
• Wipe the pot clean and return it to the stove of medium heat. Pour in the milk, half-and-half, cream, and the broth.
• Add the oregano, red pepper flakes, salt, and pepper.
• Add the sausage and onion mixture back to the pot and bring to a gentle boil.
• Add in the potatoes and kale, stirring for 1-2 minutes until the kale wilts and shrinks.
• Reduce the heat to low, cover the pot and let simmer for about 10 minutes.

How to Make: Sausage Potato Kale Soup

Ingredients
- 1 Lb Italian Sausage
- 4 Potatoes
- 2 Tbsp G&M Italian Seasoning
- Kale
- 1 Tbsp Minced Garlic
- 1/2 Yellow Onion (Diced)
- 4 Cups Chicken Broth
- 1/2 Cup Heavy Cream
- 1/4 Cup Parmesan
Directions:
1. Cut Potatoes into 1-inch cubes. Chop Kale into bite-sized pieces. And dice Yellow Onion.
2. In large pot, cook Italian Sausage until browned over Medium heat. Add Garlic and Onions and cook until Onions are translucent.
3. Add G&M Italian Seasoning, Potatoes, Chicken Broth, and stir to combine. Bring to a boil and cook until potatoes are soft (About 15 minutes).
4. Add Kale, Heavy Cream, and Parmesan. Stir to combine.
5. Serve with your favorite bread and enjoy! For additional spice, top with Crushed Red Pepper Flakes.
