Ingredients
375 grams Italian sausage (without casings) mild or spicy (¾ lb, about 3-4 sausages)
1 small onion, finely diced
1 tablespoon minced garlic (3 cloves)
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
1 pinch red pepper flakes (optional - for extra spice)
3 cups low sodium chicken broth
1½ lbs Russet or gold potatoes (about 4 medium, peeled and chopped)
2 cups chopped kale
3/4 cup cream 10-30% will work fine
1/4 cup shredded Parmesan cheese
Instructions
In a large dutch oven or soup pot, brown the Italian sausage with the onion over medium-high heat (4-5 minutes). If there is a lot of fat in the pan you can drain it or soak it up with paper towel.
Add minced garlic, Italian seasoning, salt, pepper, and pepper flakes and cook 1 minute.
Add broth and potatoes. Bring to a simmer over medium-high heat, then reduce to medium-low, cover and continue cooking, stirring occasionally, until potatoes are tender (about 10-12 minutes).
Once potatoes are tender, stir in kale, cream, and Parmesan. Let heat through before serving.

Sausage, Potato, and Kale Soup
Ingredients:
• 1 ½ pounds Italian sausage
• 1 large onion, diced
• 3 cups whole milk
• 2 cups half-and-half
• ¼ cup cream
• 4 cups low sodium chicken broth
• ½ teaspoon dried oregano
• ½ teaspoon red pepper flakes
• Salt and pepper to taste
• 8 to 10 medium red potatoes
• 1 bunch of kale, stalks removed, torn into bite-sized pieces
Directions:
• In a large pot over medium high heat, saute the Italian sausage with the onion. Cook until the sausage is completely cooked (about 5-7 minutes). Drain off the excess fat then pour the mixture onto a baking sheet lined with paper towels in order to remove as much fat as possible.
• Wipe the pot clean and return it to the stove of medium heat. Pour in the milk, half-and-half, cream, and the broth.
• Add the oregano, red pepper flakes, salt, and pepper.
• Add the sausage and onion mixture back to the pot and bring to a gentle boil.
• Add in the potatoes and kale, stirring for 1-2 minutes until the kale wilts and shrinks.
• Reduce the heat to low, cover the pot and let simmer for about 10 minutes.

-1 package of smoked sausage, chopped into small pieces
-1 Rotisserie Chicken, pulled and chopped
-2 cartons of chicken broth
-4-5 cloves of garlic, minced
-1 tsp salt, more to taste is desired
-1/2 tsp pepper, more to taste is desired
-2 tsp onion powder
-2 cans white canelli beans
-juice from 1/2 lemon
-1/2 cup heavy cream or coconut cream
-1 head of tuscan kale
Heat 1 tsp of olive oil in your soup pot. Chop and saute sausage with minced garlic until browned. Add chicken, chicken broth, and seasonings. Bring to a boil. Drain & rinse your beans, then add beans, lemon juice, cream and kale. Adjust seasonings to taste. Let simmer for about 10 minutes. Enjoy!
