How To make Santa Sandwich Cookies
1 c Butter or margarine
; (2 sticks) softened 1 c Granulated sugar
1 ts Vanilla
1 3/4 c All-purpose flour
1 c Uncooked rolled oats (quick
-or Old-fashioned) 1/4 ts Salt; optional
1 Ready-to-spread vani
-lla-flavored Frosting; (16-oz) Green or red food coloring ; optional Colored sugars Holiday sprinkles Recipe by: St. Louis Post-Dispatch 12/2/96 Beat butter, sugar and vanilla until creamy. In separate bowl, combine flour, oats and salt; mix well. Add to butter mixture; mix well. Divide dough in half. Shape each half into a roll 2 inches in diameter and about 5 inches long. Wrap in plastic wrap; chill at least 3 hours. Preheat oven to 350 degrees. Unwrap one roll of dough; cut into 1/4-inch slices. Places slices about 1 inch apart on ungreased cookie sheets. Repeat with remaining roll. Bake 12 to 14 minutes or until edges are light golden brown. Let cool 1 minute on cookie sheet; remove to wire rack. Let cool completely. Tint frosting with food coloring, if desired. Spread frosting on bottom of one cooled cookie; top with second cookie. Roll edge of frosting in decorations. Repeat with remaining cookies. Store tightly covered. -----

Raspberry Sandwich Cookies
Ingredients:
- 95g Unsalted butter
- 65g Powdered sugar
- 30g Egg yolk
- 200g Cake flour
- 50g DLA Ivana 30% White Chocolate
- 200g DLA Raspberry Filling & Topping
- 50g DLA White Chocolate Filling
- Powdered sugar
Preparation:
- Bring the unsalted butter to room temperature.
Instructions:
1. In a bowl, combine butter and powdered sugar using a rubber spatula. Gradually add egg yolk, mixing well after each addition. Sift in cake flour, and gently fold until the dough comes together.
2. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 1 hour.
2. Roll out the dough on a surface to approximately 5mm thickness. Cut out one piece with a round cookie cutter and another piece with a round cutter, removing the center with a heart-shaped cutter. Pair the two pieces together.
3. Preheat the oven to 170°C and bake for about 15 minutes.
4. Heat DLA Ivana 30% White Chocolate in the microwave until melted. Lightly spread it on the round cookie, then stack the heart-cutout cookie on top.
5. Fill the cutout-cookie with the DLA Raspberry Filling & Topping.
6. Pipe the DLA White Chocolate Filling to resemble Santa Claus's hat.
7. Finally, dust with powdered sugar.
Recipe makes 10 cookies, enjoy!
