How To make Chocolate Sandwich Cookies
For Cookie: 3 cups flour
1 1/2 cups sugar
3/4 cup cocoa powder
3/4 teaspoon salt
3 teaspoons baking powder
1 1/2 cups milk
2 eggs
1 1/2 teaspoons vanilla
3/4 cup shortening
For Filling: 3/4 cup butter
softened
2 cups powdered sugar
1/8 teaspoon salt
1 jar marshmallow cream :
7 oz.
1 1/2 teaspoons vanilla
1 tablespoon milk
For Cookie: Blend together dry ingredients and then add all wet ingredients. Blend thoroughly. Drop by rounded teaspoons onto an ungreased cookie sheet. Leave space and only use a teaspoon,they spread. Bake at 400 for 7-8 minutes. Remove immediately and cool. For Filling:Blend all and beat with mixer till fluffy. Spread filling on one cookie and top with another, sandwich style.

They’re super quick and easy to make. They have a subtle chocolate and vanilla taste and they’re packed with milk and white chocolate chips ????

All you need is:
115g unsalted butter, melted
150g light brown sugar
115g granulated sugar
1 large egg
2 tsp vanilla extract
Strong red food colouring (I used Sugarflair Red Extra)
170g plain flour
10g cocoa powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
100g white chocolate chips
75g milk or dark chocolate chips
Makes about 20-23 cookies
Bake 160C (fan) 8-10 minutes - allow to cool for 10 minutes before transferring to a cooling rack

LACE CHOCOLATE SANDWICH COOKIES
My Aunt Sultana bakes often and these were one of my favorite cookies she made for me growing up. She recently shared this recipe with me and I am so excited! They are delicious and I’m happy to make and share them with you.
About 3 dozen sandwich cookies
1 cup unsalted butter
2 ¼ cups light brown sugar
1 tbsp granulated sugar
2 ¼ cups old fashioned oats
1 tbsp all-purpose flour
1 large egg
1 tsp vanilla extract
1 12-ounce bag semi-sweet morsels
Preheat the oven to 350 degrees F.
Add the butter to a heatproof bowl and melt it in the microwave.
Immediately stir in the sugars until completely dissolved.
Stir in the flour and oats until combined.
Then, stir in the egg and vanilla.
Line a baking sheet with aluminum foil and drop batter onto the cookie sheet by the teaspoonful. Leave 1-inch between the cookies.
Bake the cookies for 7-9 minutes, or until the middle part is flat and the edges are golden brown.
Remove the cookies from the oven and allow them to cool.
While the cookies are cooling, melt the chocolate in a heatproof bowl in a microwave.
Working quickly, remove two cookies from the baking sheet and spread a thin layer on underside, and then sandwich the other cookie on top. Repeat with remaining cookies.

▣ Ingredients:
Unsalted butter 60g
Powdered sugar 40g
Egg yolk 18g
Cocoa powder 10g
Cake flour 110g
Chocolate 60g
▣ Baking:
170°C/338°F 15-18min
▣ Mold diameter:55mm(this recipe can produce 18 pieces)
▣ Method:
1.Mix softened unsalted butter and powdered sugar well.
2.Add the egg yolk, mix well, then add the sifted cake flour and cocoa powder, cut and mix to form a dough.
3. Place the dough on greaseproof paper, roll out until 3mm thick, freeze for half an hour, cut out the desired shape and size with a mold, here is a 55mm diameter circle.
4. Bake the cookies on a perforated baking mat and allow to cool after removing from the oven.
5. Melt the chocolate in the microwave oven, the temperature of the melted chocolate is between 40-50°C/104-122°F, here use 70% dark chocolate, you can choose according to personal preference.
6. Squeeze the melted chocolate onto the cookie and serve after the chocolate has solidified.

INGREDIENTS for about 12 double cookies
Cookie dough
7/8 cup (200 g) of unsalted butter (softened)
2 Cups (240 g) of all-purpose flour
1 teaspoon of vanilla extract
1/2 cup (100 g) of brown sugar
5 and 1/2 Tablespoon (40 g) of unsweetened cocoa powder
1 pinch of salt
Vanilla cream cheese frosting
1/3 cup of Butter (75 g) unsalted butter (softened)
3/4 cup (75 g) of powdered sugar (icing sugar)
5.5 oz (150 g) of Full Fat Cream Cheese
1 teaspoon of vanilla extract
1/2 teaspoon of corn starch
1 pinch of salt
Directions:
Before you start make sure you have softened butter.
1. Line two baking sheets with parchment paper or silicone baking mats and set aside.
2. In a bowl mix the flour, salt, and unsweetened cocoa powder.
3. In a separate medium bowl, whisk together the softened butter, brown sugar, and vanilla extract until they are combined.
4. Add the flour mix and work with your hands until completely combined.
5. Roll out the dough to about 1/4 inch (6 mm) between parchment paper.
6. Refrigerate for 15 minutes and preheat oven to 350°F (175°C).
7. With Round Cookie/Pastry Cutter cut the dough into individual rounds and place on a large parchment-lined baking sheet, leaving some space between each cookie. Collet the scrap dough, roll and repeat until you have finished the dough.
8. Bake in the preheated oven for about 12 minutes depends on your oven. Make sure not to overbake the cookies.
9. Remove from the oven and cool on the baking sheet for about 10 minutes, then carefully transfer the cookies to a wire rack to cool completely.
Cream cheese Frosting
1. Mix the Powdered sugar with salt and corn starch.
2. In a medium bowl with a hand mixer, beat the softened butter until smooth.
3. Add the confectioner's sugar mix and beat at low speed until incorporated then whisk at high speed for about 5 minutes.
4. Add the cream cheese, vanilla extract, and beat again for about 2 minutes.
5. Refrigerate the frosting for 10 minutes.
6. Using a spoon or a piping bag fill half of the cookies with about 1 tablespoon of Cream cheese frosting and top with the remaining cookies. Enjoy!
Keep the cookies in the fridge in an airtight container or covered with plastic wrap if you will eat them shortly. Take out the cookies at room temperature 5-10 minutes before serving.
