1/2 c Egg, hardboiled & chopped 1 c Potato, cooked & diced 1 c Beets, cooked & diced 1 c Green peas, cooked 1/4 c Carrots, shredded 3/4 c Yogurt, plain 1/2 t Salt 1/2 t Black pepper 1/2 t Cider vinegar 6 ea Scallions chopped Mix all ingredients together in a large bowl. Cover, refrigerate to chill, and serve on a bed of lettuce or cabbage leaves.

Authentic Ukrainian Beet and Potato Salad
This beet (or beetroot) Vinegret salad is one of my favorite healthy dishes. Very easy to make and customize, but very hard to stop eating.
This salad has many variations and is very popular in many Eastern European countries, mostly Russia, Ukraine, and Belorussia. The name of this dish is a bit confusing and derived from the vinaigrette dressing.
You can be very flexible with ingredients and their amount, just keep in mind the proportions - more beets (beetroot), a bit less potato, and even fewer carrots. Rest is up to you! Popular ingredients include green peas, pickled herring (very traditional), pickled mushroom, and fresh cabbage. This particular variation is one I used to eat growing up, so I have a special attachment to it.
Ingredients: 1 lb (450g) of red beets (beetroot) 1 medium yellow potato (about 7 oz / 200g I guess) 1 smallish carrot 1 small yellow or white onion (or red for a milder flavor) 2 fermented pickles 1/2 cup (100g) of cannellini beans (or any other large beans) 1/2 cup (100g) of sauerkraut 1 tbsp of white wine vinegar 3-5 tbsp of sunflower oil (or some other neutral oil) Salt
