✔7 oz goat cheese log
✔2 red beets
✔2-1/2 cups arugula
✔3 tsp honey
✔¼ cup pistachios

Amazing Beet Appetizer - Super Healthy!
Original, easy-to-make and light appetizer made from red beet. It's very healthy because of ingredients used, and can be enjoyed before the main dish or as a side salad. Make it for your friends for dinner, and everyone will be asking you for a recipe afterward.

Cook Easy Recipe:
1 medium red beet
1 apple
1/4 cup dried cranberries
1/4 cup chopped walnuts
1/2 cup plain yogurt
2 TS lemon juice
2 TS grape seed oil
Salt
Preheat oven to 410 F (200 C), wrap beet well in aluminum foil, put on baking sheet. Bake 1 hour.
Uncover and check if it soft and ready with a fork. Let beet cool, then peel and shred.
Peel and shred apple. Add cranberries, walnuts and salt.
Make dressing: whisk yogurt, lemon juice and oil. Mix beet and dressing.
Serve in small cups and enjoy as a great appetizer.
