How To make Roast Stuffed Shoulder Of Lamb~
4 Pounds Shoulder Of Lamb
Boned
Stuffing: 1/2 Ounce Butter
2 Ounces Mushrooms :
Chopped
3 Ounces Soft White Bread Crumbs
Salt And Pepper 1/2 Teaspoon Mixed Herbs
1 Egg To Bind Or Beaten
3 1/2 Ounces Prepared Stuffing Mix
Flour Dried Rosemary :
Optional 1 Clove Garlic -- Optional
Salt And Pepper
Open out meat and place stuffing near centre. Roll up and tie firmly with string at 1 " intervals. Place meat on rack in roasting tin. Dust with flour (this helps crisp the fat) and sprinkle with rosemary. Place skinned, crushed clove of garlic beneath the rack.
Cook in a very moderate oven (350 F, gas mark 3) for 45 minutes per pound stuffed weight. When done, remove roast to a heated platter and keep it warm while you make gravy in the roasting tin.
Pour of all but 1 tablespoonful fat. Stir in 1 tablespoon flour. Gradually add about 3/4 pint hot stock (e. g. liquid in which vegetables have been cooked) and boil up.
Adjust seasoning to taste, strain and serve. Usual accompaniments are mint sauce or redcurrant jelly, roast or creamed potatoes, carrots, cauliflower or peas.

Garlic and Herb Roast Leg of Lamb, Slow Cooked to perfection.
This recipe will give you a perfect roast leg of lamb every time. If you can, buy a Spring leg of lamb, usually under five months old, probably the ultimate Sunday roast. It’s actually quite easy to make, just follow a few simple steps and your lamb will be to die for.
This one has the bone still attached, hence making it tastier and extra moist which is my preference. It’s cooked at a lower temperature for a longer time resulting in more even cooking throughout plus juicier. Use woody rosemary if you can, it will be easier to insert.
If you don’t have a roasting rack, cut a peeled onion in two and place your lamb leg on the onion so it sits higher than the liquid.
Lamb is a wine friendly meat, so have it with a nice bottle of medium to full bodied red, like a Bordeaux or Cabernet Sauvignon.

Greek Style Roast Leg of Lamb (Perfect for your Easter Table!!)

Ingredients
1 leg of lamb, bone-in, about 7-8 pounds
10 or more garlic cloves, cut into slivers
2 onions, quartered
salt (about a half teaspoon per pound)
freshly ground black pepper
2 sprigs of fresh rosemary
1 cup of water
1/3 cup fresh lemon juice
1/4 cup olive oil
2 teaspoons dried crushed oregano,
Instructions
Preheat the oven to 350 °F, 180 °F.
Use a sharp knife to cut slits into the leg of lamb. Stick the garlic slivers into the slits.
Place the lamb in a large roasting pan.
Combine the lemon juice and olive oil together and pour it all over the lamb. Season the lamb on both sides with salt, pepper, and oregano.
Add the rosemarry sprigs and the onions to the pan. Pour the water into the pan.
Cover the lamb with a sheet of parchment paper and then tightly with aluminum foil.
Bake for 3-4 hours or until the meat is soft and almost falling off the bone.
Remove the foil and parchment and place the pan back into the oven and onto the middle rack. Turn the broiler element on and broil for 5-10 minutes or until the top is golden. Keep a close eye on it so that the lamb does not burn.
Serve with roasted lemony potatoes, tzatztki, and Mediterranean Rice pilaf. Enjoy and Kali Orexi!
Notes
Marinate the meat and insert the garlic cloves the day before serving. Keep it refrigerated and allow the meat to come to room temperature before roasting.
