Tongue is a simple, hearty meal that is very delicious. The meat if cook well is very tender and tasty. Here I am making cow's tongue with red wine, prunes and tomatoes. Usually when cooking tongue people add vinegar. I prefer not to and instead I use 1/4 cup of regular beer while the tongue is cooking in very slow heat for about 3 hrs and half. This recipe is for 4 people. The size of the tongue is medium size. Remember that once cooked and cleaned the size is smaller from the original size.
