How To make Potato and Leek Casserole
3 c Leeks, well-scrubbed, cut
-into 1/2-inch pieces 1/2 c Carrots
shredded
2 tb Olive oil
Salt and pepper to taste 1 t Rosemary, powdered, dry
1 c Vegetable broth
2 lb Potatoes, red :
unpeeled,
-sliced in thin rounds 1/4 c Parsley or chives (or mixed)
-finely chopped
Preheat oven to 375 degrees. In deep skillet, coat leeks and carrots with olive oil. Cover and simmer over low heat until soft. Add seasonings. Mix well. Layer a well-oiled 2 1/2-to 3-quaart casserole (with cover) with 1/3 of the potatoes, then 1/2 the seasoned vegetables. repeat and finish with last 1/3 of potatoes. Pour broth evenly into casserole. Cover and bake for 50 minutes covered at 375 degrees. Uncover and bake for another 20 minutes. Garnish with parsley and chives. Variation: Substitute carrots with zucchini if desired. Back when magazines were a thing (I can't believe I just typed that), Gourmet was one of my favorites. It had beautiful food photography and recipes that were elevated, but still accessible. Their last issue was supposed to be Christmas 2009, but it was never published. Thanks to the intrepid staff at epicurious.com, they published the recipes from this lost issue.
I followed the recipe and showed all the steps. It's a great holiday side. Paired beautifully with the Standing Rib Roast!

How to Make Leek Soup?
A list of materials :
2 leeks
3 Tablespoons of olive oil
1 piece chopped onion
2 cloves of chopped garlic

1 water glass of bone broth

Potatoes Au Gratin (creamy French Potato Bake)

Potato ll Carrot and Leek Gratin recipe
Ingedients:
3 (thin) Leeks
5-6 small potatoes
2 grated Carrots
2 tablespoons of flour
300 ml. milk
1 cup of grated cheddar
1 and a half teaspoons of salt
1 teaspoon of black pepper
1 teaspoon of red pepper powder
Preparation:
1.Pour less than half a tea glass of olive oil into a suitable pan and heat. Then, add finely chopped potatoes and sautée by stirring occasionally. The potatoes will not be fully browned, but should be slightly softened.
2.Next, add finely chopped leeks and grated carrots. After that, add Add and spices Roast the leek until it loses its volume.
3.Then, add 2 tablespoons of flour to the mixture and stir. Next, add milk little by little and continue mixing. Cook the meal until it has a completely creamy consistency. Lubricate the medium size tray and poured the meal into it.
4.Flatten the top and sprinkle with grated cheddar cheese.
5.Bake in a preheated 180 degree oven until the cheese melts and turns brown.
6.Wait for a while, then, slice and serve.
