How To make Potato and Cheese Lasagna
4 lg Sweet potatoes; peel
4 lg Idaho baking potatoes; peel
4 lg Red skinned potatoes w/skin
2 c Olive oil in a bottle; for
-drizzling, approx 3 tb Garlic; chop
2 c Cheddar cheese; grate
2 c Mozzarella; shred
Salt and black pepper Preheat oven to 350~. Oil bottom of an 8x10" baking dish. Using a vegetable slicer or very sharp knife, slice sweet potatoes as thin as possible. Slice baking and red skin potatoes as you need them, to prevent browning. Cover bottom of dish with a layer of Idaho potato slices, slightly overlapping. Drizzle with oil, sprinkle with garlic and cheeses and season with salt and pepper. Top with sweet potatoes, then red skin potatoes, seasoning and sprinkling each layer. Continue layers until all potatoes are used up, reserving enough cheese to fully cover top layer. Cover with foil and bake until potatoes are fork tender. Remove and let sit before cutting. Potato lasagna: a delicious dish ready in no-time!
Layers of potatoes, cheese and bacon: you'll fall in love with this dish!
INGREDIENTS
5 large potatoes, peeled, thinly sliced;
200 g (7 oz) sliced ham;
150 g (5 oz) sharp cheese, shredded;
200 g (7 oz) mozzarella, shredded;
2 eggs;
300 g (1 ¼ cup) cream;
½ cup bacon, cooked, crumbled.
METHOD
Cover sliced potatoes with cold water and add a generous pinch of salt. Set aside for 15 minutes, then drain and pat dry.
Layer potato on the bottom of a square baking pan, slightly overlapping. Top with ham and both kinds of cheese, then add another layer of potatoes and repeat until you fill the pan. Cover second to the last layer of potato with crumbled bacon. Add another layer of potato on top and add leftover cheese.
Bake at 180C/350F for 90 minutes.

½ cup diced onion
2 cloves garlic, minced
1 (28 oz) can crushed tomatoes
2 (6 oz) cans tomato paste
2 (6.5 oz) cans canned tomato sauce
½ cup water
2 tbsp white sugar
1 ½ tsp dried basil leaves
½ tsp fennel seeds
1 tsp Italian seasoning
1 ½ tsp salt, divided, or to taste
¼ tsp ground black pepper
4 tbsp chopped fresh parsley
16 oz ricotta cheese
1 egg ¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese
Lasagna sheets
4 cups flour
4 whole large eggs
5 large egg yolks
