How To make Pepper Salad Appetizer (Piperies Orektiko)
Karen Mintzias 6 lg Sweet peppers
1 md Onion; coarsely chopped
Salt & pepper to taste 3 tb Vinegar (more if desired)
1/4 c Olive oil
Oregano Bake peppers in hot 450 F oven for about 20 minutes or until wilted and soft. Remove seeds and outer skin. Cut in pieces and place in a bowl. Add onion, salt and pepper. Mix vinegar and olive oil and add to peppers. Sprinkle with oregano. Adjust seasonings if necessary. Serve as appetizer. This recipe is home. For as long as I can remember we have been marinating bell peppers and hot peppers in Bulgaria this way. Roasted and marinated vegetable dishes like these have been part of our culture and part of our table for generations. These peppers are perfect as a side, on sandwiches, wraps, on top of salads and enhance the flavour when topped on any dish. When it’s pepper season we actually love to roast hundreds of peppers and store them in the freezer to have ready for side dishes like this one. They are amazing for breakfast with eggs and feta which is one or my favourite ways to enjoy them. This simple few ingredient Garlic Marinated Roasted Bell Peppers recipe is perfect for any barbecue or get together and your guests will absolutely love them.
INGREDIENTS
1 lb of mini bell peppers — or any peppers you like hot peppers are amazing as well
salt to taste
4 cloves of minced garlic
drizzle of olive oil — measure with your heart
1 tablespoon of white wine vinegar — or any vinegar you like
⅛ cup of freshly chopped dill — or basil if you don’t like dill

2 Tbsp olive oil
1 bag of mini sweet peppers
2 shallots sliced thin
1/2 cup pit less olives (reg or spicy) sliced thin
1/4 cup fresh parsley chopped or torn
1/2 tsp salt
1 large baguette
8 slice provolone
1/3 cup mayo
1 tsp Calabrian chili pepper
2 tbsp of balsamic reduction/glaze
-Preheat oven to 450F
-Place peppers onto a large baking sheet and drizzle with 1 Tbsp olive oil
-Roast for 15 minutes are until they begin to char.
-Once out of the oven, reduce the heat to 400F
-Remove the stems and seeds (optional). For this dish, I decided to remove the seeds because I thought it would look more appealing without them, but when I eat these whole, I leave the seeds in.
-To medium sized bowl add roasted peppers, shallots, olives, remaining olive oil, salt and parsley. Gently mix together.
-To a small bowl add mayo and chili pepper.
-Cut the baguette in 1/2 lengthwise. Place both halves on a baking sheet. Top first with mayo mixture and then provolone. Bake at 400F for 5-10 minutes.
-Top with pepper mix and drizzle balsamic glaze just before serving.

Mexican Style Vegetarian Stuffed Bell peppers On the Grill Recipe:
Ingredients:
For 1 Bell Pepper:
Make Southwestern Blend:
1/4 cup corn
1/4 cup black beans
1/4 cup chopped green & red bell peppers
1/4 cup chopped white onion
For mix:
1 spring oregano or 1/2 teaspoon dried oregano leaves
3 tablespoons Taco Seasoning
1/2 cup shredded Mexican cheese
Directions:
1. Add corn, black beans, chopped green & red bell peppers & chopped onion. Then parboiled the blend.
2. Add oregano & Taco Seasoning & 3 tablespoons cheese to the blend. Mix.
3. Take the stem of the bell pepper. Cut into halves. Deseed .
4. Stuff the blend mix. Top with shredded cheese.
5. Put them on the grill till cheese starts melting.
6. Take off the grill & Enjoy!
