Peanut butter chocolate cookie bars recipe
Easy chocolate chunk peanut butter cookie bars recipe:
Ingredients
1 cup all purpose flour (135 g)
1/2 teaspoon baking powder (3 g)
1/2 teaspoon fine sea salt (2 g)
3/4 cup packed light brown sugar (135g)
1/3 cup melted salted butter (75 g)
1/3 cup smooth peanut butter (80 g) *
1 large room temperature egg (55-65 g)
3/4 cup chocolate chunks (equal parts milk and dark chocolate) ** (135g)
*I recommend using a processed peanut butter (Kraft/Jiff/Skippy etc)
** Mix 1/2 cup of chocolate chunks into the cookie dough and reserve 1/4 cup for sprinkling on the top of the cookie bars. You can also use chocolate chips if you would prefer, or even omit the chocolate completely.
Directions
Preheat oven to 350F/175C. Line an 8”x8” pan with foil or parchment paper (This step is optional but it makes it very easy to remove the cookie bars once baked). In a medium bowl combine flour, baking soda, and salt. Whisk until well combined and then set aside.
In a separate large bowl combine brown sugar, melted butter, egg and peanut butter. I’m making these without a mixer but you can use a mixer if you would prefer. Whisk vigorously for 2 minutes. The mixture should be light and airy.
Add the dry ingredients and using a spatula mix until everything is just combined. Add 1/2 cup of the chocolate chunks (reserving 1/4 cup to sprinkle on top on the bars). Mix until evenly distributed with no streaks of flour remaining.
Transfer cookie dough into the prepared pan and use your spatula to spread it into an even layer. Sprinkle the remaining chocolate chunks on top. Bake the cookie bars for 20-24 minutes, removing from the oven when the edges are a medium brown and the middle is just set. Allow the bars to cool in the pan for 20 minutes, and then lift them out the pan and slice into squares. These peanut butter chocolate chunk cookie bars are best served slightly warm with the chocolate not yet set.
This recipe will yield 9-16 servings depending on how you cut the cookie bars. They will keep for 3 days at room temperature or up to 5 days in the fridge. This recipe can also be doubled and baked in a 9”x13” pan. Increase the baking time by 2-6 minutes.

No Bake Chocolate Peanut Butter Bars Recipe
You can never go wrong when pairing chocolate with peanut butter. Even if you don't like peanut butter you are going to love these Chocolate Peanut Butter Bars. The flavors combine so well, a bit of sweet, salty, chocolaty, nutty flavor, mmmm...totally amazing. It takes no more than 20 minutes to prepare and everybody will love it.

Ingredients
Makes 9-12 servings
Base
7 oz (200g) digestive biscuits (graham crackers)
1/3 cup (70g) unsalted butter, melted
1/2 cup (120 g) crunchy or creamy peanut butter
Chocolate Layer
7 oz (200 g) bittersweet chocolate (55%-70% cocoa)
1/4 cup (60g) creamy peanut butter, divided
Directions
1. Place the biscuits (or graham crackers if used) into the bowl of a food processor and blend until crumbs form. Add peanut butter and melted butter and process until completely combined and the mixture holds together.
2. Slightly grease a 8x8 inch (20x20cm) square pan and line with parchment paper, in such a way that some edges are longer to make it easy to lift it up once it's set.
3. Spread the peanut butter mixture into the prepared baking pan and press with the back of the spoon to create a smooth surface.
4. Melt chocolate and 2 tbsp (30g) of creamy peanut butter over bain marie, over low heat. Stir until smooth. Meanwhile place the other 2 tbsp (30g) of peanut butter into a small sauce pan over low heat and stir until melted and smooth. Spread the chocolate over peanut butter layer. Add teaspoons of melted peanut butter on top and with a knife create swirls on the surface.
5. Refrigerate for 2 hours to set. Let it sit 10 minutes at room temperature before cutting. Bars can be frozen well. Enjoy!

If you are concerned about consuming raw flour you can toast the flour prior to using it in the recipe. Simply place the flour into a skillet over medium heat and toast for 3 to 5 minutes. Use the toasted flour in the recipe as directed.
✅Ingredients
COOKIE DOUGH LAYER:
• ½ cup butter, softened
• ¾ cup brown sugar, tightly packed
• ¼ teaspoon salt
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• 14 oz. sweetened condensed milk
• 2 cups mini chocolate chips
PEANUT BUTTER LAYER
• 1 cup smooth peanut butter
• ½ cup powdered sugar
CHOCOLATE LAYER
• 12 ounces milk chocolate chips
• ½ cup heavy cream (optional)
✅Instructions
1️⃣ 00:22 - Spray a 9x9 baking pan with nonstick cooking spray and line with parchment paper.
2️⃣ 00:40 - Make the cookie dough layer by using a hand mixer to cream together butter and brown sugar in a mixing bowl. Mix in salt and vanilla. Slowly mix in flour and sweetened condensed milk, alternating between the two. Stir in mini chocolate chips. Press the dough into the prepared baking pan.
3️⃣ 02:28 - Make the peanut butter layer by using a hand mixer to cream together peanut butter and powdered sugar in a mixing bowl. Gently spread the peanut butter mixture over the cookie dough layer.
4️⃣ 03:05 - Make the chocolate layer by pouring the chocolate chips into a microwave safe bowl. For a softer chocolate layer, pour in heavy cream (optional). Microwave 15 seconds at a time, stirring in between, until chocolate is smooth and melted. Pour over peanut butter layer immediately and smooth out with a rubber spatula.
5️⃣ 03:53 - Refrigerate for 4 hours before slicing and serving.
