How To Make Peanut Butter Jelly Pie | Delish
This classic sandwich isn't just for lunch anymore
DIRECTIONS
1. Preheat oven to 375 degrees F.
2. Toss blueberries with sugar, cornstarch and a pinch of salt. Pour mixture into pie crust.
3. Meanwhile, make the peanut butter-oat streusel. In a medium bowl, combine butter, brown sugar, oats, peanut butter, cinnamon and flour. Stir with fork until you form small crumbles. Place on top of blueberry mixture.
4. Bake until the filling is bubbly and the topping is golden brown, about 1 hour. If the streusel is browning too quickly, cover with foil.
INGREDIENTS
1 frozen pie crust, defrosted
4 c. blueberries
1 c. sugar
1/4 cornstarch
kosher salt
1/2 stick melted butter
1/4 c. brown sugar
1/2 c. old-fashioned oats
1/2 c. peanut butter
2/3 c. flour
1/2 tsp. ground cinnamon

1 1/2 cup plain flour

Raspberry Jam Bars | Small Batch Version
These Raspberry Jam Bars are a delicious treat that can be made in a small batch. The shortbread crust is buttery and crumbly, and the raspberry jam adds a sweet and tangy flavor. They are perfect for a quick and easy dessert.

Ingredients:
6 Tbsp butter, softened and divided
3/4 cup plus 2 tsp flour
1/4 cup sugar
1/8 tsp salt.
1 Tbsp brown sugar
1/3 cup old fashioned oats
1/4 cup raspberry jam or other flavor
1/3 cup raspberries or other fruit
1 tsp lemon juice
Directions:
Preheat oven to 375 degrees F
Line a 9 x 5 loaf pan with parchment paper
Shortbread Crust layer;
In a bowl combine 5 Tbsp softened butter, flour, sugar and salt.
Use your clean hands to mix it together until it resembles small crumbs.
Set aside 6 Tbsp of the mixture to use on top of the bars.
Press the remaining mixture into the bottom of the 9 x 5 inch pan. Press down on it.
Bake in oven for 14 minutes or until edges turn lightly golden brown
Crumb Layer:.
Take the remaining crumb mixture and add in brown sugar, oats and remaining 1 Tbsp of butter. Mix together until combined.
Raspberry Layer:
In a bowl, combine jam, raspberries and lemon juice.
Mix and smash the berries.
Spread the berry mixture over the top of the hot shortbread crust and then sprinkle the streusel topping over the jam layer. Don't press down on the crumb topping.
Put it back in the oven and bake for 20 minutes or until topping is golden brown and the filling is bubbly.
Remove from oven and cool for a few minutes.
Lift the bars out of the pan with the parchment paper liner and cut into 4 big pieces or 8 squares.

Raspberry Oatmeal Squares Recipe | How to Make Raspberry Oatmeal Bars
Another quick and easy dessert for oatmeal lovers. These raspberry oatmeal bars are crispy on the outside and soft on the inside. You can prepare this recipe with fresh or frozen raspberries. And the most important part: to make these delicious raspberry oatmeal squares you need only few basic ingredients.

Ingredients:
For the crumble:
1 cup (125g) All-purpose flour
1½ cups (135g) Rolled oats
1/2 cup (100g) Light brown sugar
1/2 teaspoon Baking soda
1/2 teaspoon Cinnamon *optional
1/4 teaspoon Salt
1/2 cup (115g) Butter, softened
For the raspberry filling:
300g (10.5oz) Raspberries, fresh or frozen
1 teaspoon Lemon zest
2 tablespoons (25g) Sugar
2 tablespoons (15g) Cornstarch
1 teaspoon Vanilla extract
Directions:
1. Preheat oven to 350F (175C). Line a 8-inch (20cm) square baking pan with a strip of parchment paper. Set aside.
2. Make the crumble: In a large bowl, combine oats, flour, salt, brown sugar and baking soda. Add the butter and mix until crumbly.
3. Make the filling: in a large bowl mix raspberries, lemon zest, sugar, cornstarch and vanilla extract. Set aside.
4. Press 2/3 of the crumble mixture into the bottom of the baking pan. Spread the filling over the base, Sprinkle the remaining oat mixture.
5. Bake for 35 minutes, until golden brown. Let cool completely, then refrigerate for at least one hour before cutting into squares.
