How To make Party Nibbles: Spanakopita Crackers
1 tb Butter
1/2 c Shallots, finely chopped
- or onions 1 lb Frozen chopped spinach
-thawed 1 pn Nutmeg
1 pn Cayenne pepper
1 pn Pepper
1 c Firm goat cheese, crumbled
Salt 8 Phyllo pastry sheets
1/4 c Butter, melted
These spinach and cheese filled crackers can be made ahead, ready to pop into the oven at show time. For an even more artistic presentation, tie up with chives. The phyllo dough can be cut on the diagonal and the edges ruffled up. In non-stick skillet, melt butter; cook shallots over medium-low heat, stirring often, for 5 minutes or until softened. Press out excess liquid from spinach and chop finely. Add to skillet; cook, stirring, over medium heat just until moistened. Stir in nutmet, cayenne pepper and pepper. Transfer to bowl; let cool. Mix in cheese; season with salt to taste. Press mixture into tiny log shapes. Place 1 sheet of phyllo pastry on work surface, keeping remaining sheets covered with a damp cloth. Brush 1 half of pastry from 1 short end to centre with butter. Fold over, aligning short ends. Cut pastry in half crosswise to make 2 pieces. About 1/2-inch in from long edges on each piece of pastry, place 2 log-shaped
mounds of filling. Roll up each piece loosely from short edge to enclose mounds completely. Cut pastry between the 2 mounds to separate into 2. With fingertips, gently press pastry together at each end of mount to form Christmas cracker shape [ed: Christmas crackers are those amusement items that are formed from a hollow tube, stuffed with a party hat and "Cracker-Jack" type prize. They produce a loud snapping sound when two people pull on either end). Repeat with remaining filling and pastry. (Can be refrigerated, separated by waxed paper in layers, in covered container for up to 3 days.) Place on nonstick or lightly greased baking sheet, about 1 inch apart. Brush with butter. Spanakopita Puff Pastry Christmas Tree Appetizer
This creamy spanakopita filled puff pastry makes a delicious and impressive Holiday Appetizer!

Serves 6-8:
2 sheets puff pastry (about 1 pound)
Egg wash: 2 egg yolks plus 2-3 tablespoons milk
For the spinach filling:
• 8 ounces baby spinach leaves, roughly chopped
• 3 scallions, finely sliced
• 1 and ½ teaspoons dried dill
• 8 ounces ricotta cheese
• 8 ounces feta cheese, crumbled
• 2-3 tablespoons olive oil
• ¼ teaspoon salt
• Black pepper, to taste
Preheat the oven to 400°F, 200°C.
Make the filling:
Combine the feta cheese, ricotta, eggs, oil, salt, pepper, and dill in a tabletop mixer fitted with the paddle attachment. Beat until combined.
Add the scallions and beat until combined.
While the mixer is running on low add a handful of chopped spinach at a time until all of the spinach is incorporated.
Mix everything together with a spatula and set aside.
On a lightly floured work surface roll out both sheets of puff pastry to about 10 by 13 inches.
Place one sheet on a baking tray lined with parchment paper.
Cut the pastry sheet into as large of a triangle as possible by trimming the sides. Trim the bottom to create a trunk.
Spread about two-thirds of the spinach filling onto the triangular pastry.
Cover with the second puff pastry and trim it into a tree shape.
Cut one-inch slits on both sides to create the branches.
Twist each branch a few times.
Brush with egg wash and chill in the freezer for 15-20 minutes.
Bake in the center rack of the preheated oven for 40 minutes or until puffed and golden.
Serve with some creamy tzatziki sauce.
Gather the scrap pieces of puff pastry and roll out about ¼-inch thick and cut out little stars. Brush them with egg wash, sprinkle with salt and bake until golden. About 10 minutes. Chill them in the freezer 15 minutes before baking.
Use the remaining spinach filling to create little turnovers as I did in the video tutorial. Enjoy!

2.5 oz of fresh spinach
1 large handful of parsley
2 cloves of garlic
7 oz of cream cheese
11.1 oz of feta cheese
Salt and pepper
2 handfuls of almonds
1 lightly beaten egg
350 degrees F convection for about 14 minutes.

Mini Spanakopita Bites (Mini Greek Spinach Pies)
Mini Spanakopita Bites make the perfect party appetizer! Recipe ⬇️
Ingredients
8 oz fresh spinach, finely chopped
1.5 tsp salt
2 tbsp olive oil
2 green onions, thinly sliced
2 tbsp fresh parsley, finely chopped
1.5 tsp fresh dill, finely chopped
4 oz feta, crumbled (+ more for topping)
1 egg, beaten
1/4 tsp pepper
1 package frozen phyllo shells (15 total)
Instructions
1. Preheat oven to 350 F. Spray a baking sheet with nonstick spray.
2. Chop washed spinach and place in a large bowl. Add 1.5 tsp salt and rub together using your hands. Set aside.
3. Slice green onions, chop fresh parsley, fresh dill, and set aside. In a separate small bowl, lightly beat an egg.
4. Using your hands, squeeze the water out of the spinach and carefully transfer to a separate mixing bowl.
5. Add 2 tbsp olive oil to the bowl with the drained spinach. Then add the sliced green onions, chopped parsley, chopped dill, crumbled feta, beaten eggs, and black pepper. Combine all ingredients using your hands.
6. Transfer frozen phyllo cups to the prepared baking sheet, leaving room between each.
7. Spoon the spinach and feta filling into the phyllo cups. Top each with a few more crumbles of feta.
8. Place in the oven to bake for 15-18 minutes (start checking at 15 for desired doneness).
