Fruit Cake Recipe Demonstration - Joyofbaking.com
Recipe here:
Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Fruit Cake.
Bakers tend to have a list of 'must haves' they want to bake for Christmas. For me, I always like to make this Fruit Cake. I just love the combination of nuts and dried and candied fruits with barely enough cake batter to hold it all together. If you have ever made a British Fruit Cake you know that what really sets this cake apart is how we repeatedly 'feed' (brush) the cake with alcohol over several weeks. This gives the Fruit Cake a subtle alcohol flavor and a moist texture, plus it also acts as a preservative so the cake can be stored for ages and ages. Of course, the step of repeatedly brushing the cake with alcohol means we have to make it well in advance of Christmas.

Gugelhupf or Kugelhopf? You be the judge!
To be honest, I haven't made this in years and there is a savory version of it I quite love but ultimately this saved me time and stuck to tradition a bit more. A handful of European countries (Germany, Austria, Switzerland, France) claim to be the inventors of this brioche like special event bread (I'm going with the holidays here) but I don't know if any can actually prove it. For the sake of tradition, which I sometimes gladly though out the window, I made this in a bundt pan. This bread or is it cake? could be made into a loaf, braided or even into small rolls. I did go off the beaten path with the add-ins. Raisins and rum, while a good flavor combo, bores me to tears. I opted for dried cranberries, Grand Marnier, orange zest, and toasted walnuts. Nice and Christmassy (yes, that's a word). Don't feel obligated to use the add-in's I did, as long as you stick to the measurements you can substitute just about any dried fruit, liquor or nut you like. Hope everyone is having a good holiday season and keeping your sanity.
Cranberry Raisin Pie Recipe Demonstration - Joyofbaking.com
Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to m ake a Cranberry Raisin Pie. One terrific tasting recipe that uses fresh cranberries is this Cranberry Raisin Pie. It is a two crusted pie with a rich and spicy filling that not only contains fresh cranberries, but also raisins, chunks of apple, chopped walnuts, and even candied mixed peel. Take one bite and you might find yourself thinking of mincemeat, albeit an alcohol free, vegetarian-style mincemeat. Serve it warm or at room temperature, with or without a scoop of vanilla ice cream.
