How To make No Bake Lemon Cheesecake
1 cup cornflakes or graham cracker crumbs
2 tablespoons sugar
1/2 teaspoon cinnamon
1/3 cup melted margarin
1 package cream cheese -- , softened
1 can sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla
Mix together crumbs, sugar, and cinnamon add margarine and blend. Set aside 2 t ablespoons of mixture. Line bottom of 9-inch pan wih crumbs. Refrigerate. Bea t cheese until fluffy, blend in milk, blend in lemon juice and vanilla. Pour i nto chilled crust. Sprinkle with set aside crumbs. Regrigerate at least 3 hou rs before serving. May be doubled and put in 9x13-inch pan.

If you’re looking for a summery fruit fix that isn’t too sweet, I’m your gal ???? it’s a bit of a running joke between my friends and I that I’m obsessed with lemon ... it makes everything better ok ???? so obviously if I’m going to make a cheesecake it’s going to be made using my favourite fruit ????

Ingredients
- 175g digestives
- 175g shortbread fingers
- 175g unsalted butter
- 550g soft cheese (I used 250g mascarpone & 200g soft cream cheese)
- 85g icing sugar
- 275ml double cream
- 5 x tbsp lemon juice (+zest for decoration)
- 1/4 x tsp yellow food colouring

Tips
- you can use 550g of either mascarpone or soft cheese; it doesn’t need to be both
- refrigerate cheesecake for approx 6 hours before serving
- don’t worry too much if you don’t have a big stand mixer, as whisking/mixing by hand works just fine (that’s how I used to do it before the mixer waltzed into my life ????)

Recipe
**This recipe will not turn out as firm as a baked in the oven cheesecake.**
Graham Wafer Crust:
1-1/4 cup Graham wafer crumbs
1/3 cup melted butter
Mix the crumbs and butter together. Form into crust in ungreased pie plate.
Filling:
1 brick of Cream Cheese (226 g or 8oz)
1 can sweet condensed milk (300ml or 10oz)
1 tsp vanilla
1/3 cup of lemon juice
Mix everything together until smooth.
Pour the filling into the pie crust. Refrigerate for 5 hours or until filling is firm enough to cut into.
Enjoy!!

This lemon cheesecake recipe is non-bake and delicious. I made it as so many people love lemon cheesecake. This cheesecake is the perfect blend of sweet and sour. The cake looks visually appealing and is guaranteed to impress your family and friends. What's more, it is very easy to make this cheesecake. All ingredients and method steps are listed in the recipe below. It's the sort of recipe anyone can make.

How to make a Lemon Cheesecake [No-Bake] Best Recipe Easy Cheesecake recipe
Lemon Cheesecake Recipe.
TIMINGS:
Prep Time: 30 mins.
Chill Time: 8 hours.
Total Time: 8 hours 30 mins.
SERVES:
Can be cut into 16 slices.
INGREDIENTS:
For the biscuit base:-
• 3 cups (300g) Shortbread Biscuits.
• ¼ cup + 3 tbsps (100g/3½ oz) Butter, (melted).
For the cheesecake:-
• 3¼ cups (750g/26oz) Cream Cheese or Mascarpone (full fat).
• ¾ cup + 2 tbsps (125g/4½ oz) Icing Sugar.
• 1¼ cups (300ml/10.14 fl oz) Double Cream.
• 6½ tbsps (100ml/3.3 fl oz) Lemon Juice (about 4 lemons).
• Yellow Gel food colouring (optional).
For the decoration:-
• ¾ cup (200ml/6.7fl oz) Double Cream.
• 2 tbsps Icing Sugar (optional).
• 4 tbsps Lemon Curd.
• Lemon Slice.
METHOD:
To make the biscuit base:-
1. Using a food processor blitz the biscuits into crumbs or place them in a bowl and using the bottom of a glass break them up.
2. Pour the biscuit crumb into a bowl and add the melted butter and mix.
3. Using a spoon press the mixture into the bottom of a 20cm springform tin.
4. Place in the refrigerator for 30 minutes to set.
For the cheesecake filling:-
1. Whisk the cream cheese and icing sugar together until smooth.
2. Add the double cream and whisk again until the mixture is starting to thicken.
N.B.You need to be careful at this stage while whisking as the food colouring will need adding and will take longer to mix it in as you don’t want to overmix.
3. Add the yellow gel food colouring and lemon juice and mix again at a low speed until the food colouring is fully mixed in and you have a nice thick mixture and holds its shape.
4. Pour the mixture into the tin on top of the biscuit base and smooth out with a spatula or spoon.
5. Place in the refrigerator for at least 6 hours, or preferably overnight for a better set.
To decorate:-
1. Insert a knife between the cheesecake and the side of the tin and slide the knife along the side of the tin.
2. Remove from the tin and place on a serving plate.
3. Whip the double cream with icing sugar until it holds its shape.
4. Pipe cream rosettes (about 16) around the sides of the cheesecake. N.B: I use a 2D piping tip.
5. Place a slice of lemon between each cream rosette.
6. Spoon lemon curd into the centre, spreading it out until the centre is completely covered. If you prefer to use something different to lemon curd, grate the zest of a lemon into the centre.
7. Place in the refrigerator until you're ready to serve.
8. Mmm Scrummy!!!
STORAGE:
• Store in the refrigerator and eat within 3 days.
• Can be kept in the freezer for 1 month.
