How to Make No-Bake Lemon Cheesecake | I Heart Recipes
Hey friends! If you’re looking for a super easy, tasty dessert, try my No-Bake Lemon Cheesecake.
It doesn’t get much easier than this, fam! This recipe calls for simple, minimal ingredients and requires no baking. It’s the perfect summertime dessert. Your guests will love it, and so will you!
Simply whip together cream cheese, sweetened condensed milk, jello mix, hot water, vanilla and lemon juice until nice and creamy. Pour into a store-bought graham cracker crust (you can make your own, if you prefer), cover and refrigerate. That is it, y’all! Simply serve and enjoy. Super amazing and easy.

0:10 - Mix cream cheese until creamy.
0:14 - Pour in sweetened condensed milk.
0:22 - Mix the ingredients well.
0:30 - Sprinkle in a package of lemon gelatin.
0:37 - Pour in hot water.
0:41 - Beat until smooth.
0:50 - Scrape the sides.
0:54 - Pour the batter into a graham cracker crust.
1:05 - Cover and refrigerate for at least four hours.
1:08 - Slice.
1:13 - Serve.

Ingredients:
▻200 grams of Ginger nuts or any other biscuit of choice
▻80 grams of melted butter
The zest of 2 Lemons
▻300 grams of full fat cream cheese
▻3/4 cup of granulated sugar
▻300 Mls of double cream (whipping cream )
▻A few drops of Yellow food colouring
▻1 Teaspoon of Lemon essence or lemon extract
▻2 Tablespoons of Lemon Curd

Method:
Break the ginger nuts up unto smaller pieces the blend to a fine crumb
(Or you can smash them with a rolling pin )
Add the melted butter to the crumb mix in a bowl
Mix well to combine take some of the mix if it holds its shape then it’s ready to use
In a loose bottle cake tin line with food wrap
Spread the crumb mixture into the lined cake tin lightly pressing down using the back of a spoon or rolling pin
Refrigerate for 30 mins minimum
In a mixing bowl add the cream cheese
Add the lemon zest Add the sugar
Add the Lemon essence or extract
Add the double cream or whipping cream
Whisk until he mixture thickens
Remove the biscuit base from the refrigerator
Spread the cream cheese mixture over the base
Smooth out using a spatula
Mix 2 Tablespoons of Lemon curd
Decorate the top of the cheesecake with the lemon curd
Refrigerate for 1 hour minimum
Serve and enjoy

What I used (8 inch/20cm Springform tin)
For the base-
200g / 8oz of Digestive Biscuits
100g / 4oz of Unsalted butter
For the filling-
500g/ 18oz Philadelphia cream cheese
125g /4.4oz Icing or Powdered Sugar
150ml /5.3oz Double cream or heavy whipping cream
The zest & juice of two lemons
For the topping-
10g /2 teaspoons Gelatin powder
150ml /5 oz Boiing water
5 Tablespoons lemon curd
200ml (7 oz) Whipped double cream
1 Tablespoon Icing sugar

No-Oven Lemon Cheesecake Recipe with Basic Ingredients
Ingredients
For the Cream
500g cream cheese (2 cups)
50g sour cream (3 tbsp)
15ml lemon juice (½ tbsp)
70g sugar (⅔ cup)
10g vanilla powder (2 tsp)
180g whipping cream (¾ cup)
For the Crust
300g biscuit (3 cups)
90g butter (6 tbsp)
A pinch of salt
For the Lemon Curd
90ml lemon juice (⅓ cup)
2 eggs + 1 egg yolk
100g sugar (½ cup)
30g butter (2 tbsp)
15ml whipping cream (1 tbsp)
10g vanilla powder (2 tsp)
Cake mold size: 19 cm
How to cook
Cheesecake
- Add the biscuits to a food processor then pulse until you have small crumbs.
- Add the melted butter and a pinch of salt while you pulse then mix together until thoroughly combined.
- Transfer the crust to a springform cake pan and press the crust into the pan until compact.
- Add the cream cheese and sugar to the bowl and whisk the cream together until well combined.
- Add the the sour cream, lemon juice and and vanilla then mix.
- Add the cream. Mix until fully incorporated making sure to scrape down the bowl.
- Transfer the filling to the prepared crust.
- Smooth the top with a spatula and chill the cheesecake to set.
Lemon Curd
- Crack the eggs.
- Add sugar and start whisking.
- When the eggs and sugar are well mixed, add the lemon juice.
- Take the mixture on the stove and whisk it continuously over medium heat.
- Keep whisking until the mixture thickens, when it thickens, take it in a bowl
- Add the vanilla extract, whipping and butter whisk.
- When the butter has melted, cover it with cling film and let it cool in the refrigerator.
- When the sauce got cold, pour the sauce over the cheesecake and refrigerate for a while.
