How To make Meat and Rice Stuffing
3 lg Onions; coarsely grated
1 lb Minced meat
1 c Parsely; finely chopped
1 c Dill; finely chopped
1 Tomato, grated or
- diluted in 2 tb Butter
1/4 c Rice (short grain)
Salt and pepper to taste 1 c Fresh mint; finely chopped
1/2 c -water
1 tb Tomato paste
1/4 c -cold water

Sticky Rice Stuffing
Serves 6
Ingredients
1 cup short grain sticky rice (sweet rice)
5 thick cut bacon, cut into bite sizes
3 cloves garlic, chopped
1 medium size yellow onion, diced
3 stalks celery, cut half in lengthwise, diced
1/2 tsp salt
1/4 tsp black pepper
1 Korean pear (aka Asian pear), diced (you can substitute with bosc pear, anjous pear or fuji apple)
1 1/4 cup chicken stock (if you like your stuffing drier side, add only 1 cup)
1/2 cup dried cranberry
2 to 3 Tbs unsalted butter
1/2 cup chopped nuts

Stuffing ingredients:
3 tbsp (45 g) ghee
400 g (14 oz) minced meat (I used top sirloin)
1 1/2 tsp salt
1 1/4 cups (300 ml) water
2 cups (400 g) American long grain rice (I used Uncle Ben's brand)
2 cups (480 ml) chicken stock
1 chicken bouillon
1 tsp each:
cinnamon and 7 spices
1/2 tsp each:
cumin and nutmeg
1/4 tsp black pepper
1/4 cup (40 g) fried pine nuts
1/3 cup (45 g) fried slivered almonds

1. In a large non-stick pot, heat ghee on medium-high heat. Add minced meat with the salt and stir to combine. Cook until all the liquid has evaporated about 7 minutes.
2. Pour in hot water, stir and cook covered on low heat for 30 minutes.
3. Add the rice, the chicken stock, chicken bouillon, and the spices stirring to combine. Cook covered on low heat for 20 minutes until the rice is fully cooked. Turn the heat off and keep the pot covered for 10 minutes
4. Stir the rice, then add the nuts mixing to combine. Let cool completely.

Cajun Rice Dressing
The holidays would not be complete without the Cajun Rice Dressing (Dirty Rice)! Browned meat and seasoning give tons of flavor to rice cooked in all of those flavors!
Ingredients
• 1-1/2 lb. ground pork
• 1-1/2 lb. ground beef
• 2 onions
• 4 stalks celery
• 1 green bell pepper
• 5 cloves garlic
• 1/2 bunch green onions
• 1 container of Savoie's rice dressing mix
• 1 stick butter
• 2 tbsp flour
• 10 cp beef broth
• 3 cups rice
• 1 tbsp Worcestershire
• 2 tbsp beef base
• Creole or Cajun seasoning
• Italian herb blend
• Dried parsley
• Garlic powder
• Onion powder
Directions
1. Brown meat in large pot with a little oil.
2. Add in trinity and cook until soft. Add in garlic and green onions.
3. Add in butter and once melted, stir in flour.
4. Add in rice dressing mix and 10 cups beef stock. Bring up to simmer. Season.
5. Add Worcestershire and beef base.
6. Add in rice and bring up to simmer. Reduce heat to really low and cover. Cook 30 minutes stirring every few minutes to prevent sticking. Uncover and cook another 10 minutes to evaporate liquid and allow rice to soften. I like my dressing a little wet. If you want a drier consistency reduce stock by 1 cup.
