How To make Wild Rice Meat Loaf
4 cups wild rice
cooked
1 pound lean ground beef :
uncooked
2 cups shredded cheddar cheese
1 cup dry bread crumbs
1 cup onion -- finely chopped
1/2 cup all-purpose flour
2 eggs -- beaten
1 1/4 teaspoons salt
1 teaspoon ground sage
3/4 teaspoon pepper
Combine all ingredients in a large bowl; mix well. Firmly press into a greased 9x5x3" loaf pan. Bake, uncovered, at 350 degrees for 70 min. Cover with foil during the last 15 minutes if the top is browning too quickly.

Vegan Meatloaf (aka bean and rice loaf)
This delicious meatloaf will remind you of your grandma's meatloaf. There a special ingredient in this one that turns up the volume on taste. Let me know if you make this!

Recipe:
add to food processor:
+ 1 C bread cubes (add first and pulse into bread crumbs)
+ 1/2 C Marinara Sauce (mine had blended dry chili to it was spicy)
+ 1 T dijon mustard
+ 2 tspn each: Basil, Oregano, marjoram, thyme, black pepper and garlic powder
+ 2 T of soy sauce
+ 2 Cups pinto beans
Blend to combine well
Then to that blended mixture add to processor:
+ 2 C brown rice
+ 2 T egg substitute (I used Just Egg)
process for 20 to 40 seconds
Empty mixture into a bowl.
Dry saute (saute without oil): 1 chopped Bell Pepper and 1 chopped Onion.
add the sautéed pepper and onion to the bowl of mixture from the food processor. Stir into that mixture:
+ 1/2 Cup Corn Meal
Stir to combine well.
pour mixture into a loaf pan and top with 1 C marinara sauce.
Bake COVERED with foil at 375F for 40 minutes. Remove from oven.
Top with another 1/4 C marinara sauce and bake for another 15 minutes.
After cooking, allow to rest for at least 20d minutes before slicing!

put it in a loaf pan but the star really
is this marinara sauce
i made marinara sauce and another day I
made some enchilada sauce I blended
those two together for kind of a chili
marinara sauce
that makes this meatloaf really good
marinara sauce would work just great
but something about those chilies in
there with the marinara sauce
that two step of adding marinara sauce
at the very end
after it's already cooked in is really
really special
