How To make Meat and Rice Stuffing
3 lg Onions; coarsely grated
1 lb Minced meat
1 c Parsely; finely chopped
1 c Dill; finely chopped
1 Tomato, grated or
- diluted in 2 tb Butter
1/4 c Rice (short grain)
Salt and pepper to taste 1 c Fresh mint; finely chopped
1/2 c -water
1 tb Tomato paste
1/4 c -cold water

Dried cranberries and nuts add great flavor to this healthy and delicious wild rice stuffing.
Step 1: Saute onions and garlic
Saute the onions and garlic in the butter until tender, about four minutes. Then add the chicken broth and bring it to a boil.
Step 2: Add rice
Add the long grain rice, cover, and simmer for 30 minutes. Then add the brown rice, re-cover, and simmer until most of the liquid is absorbed, about 30 minutes.
Step 3: Add parsley, cranberries, thyme
Add the parsley, cranberries, and the thyme to the rice. Then cover again and cook until all of the liquid is absorbed.
Step 4: Add onions and hazelnuts
Mix in the green onions and hazelnuts.
Tip
Try using pecans instead of hazelnuts.
Step 5: Put into baking dish
Put the stuffing into a baking dish, and cover it with aluminum foil.
Step 6: Place in oven
Place the stuffing in a preheated oven set at 350 degrees Fahrenheit for 40 minutes. Serve the stuffing as a side with turkey or ham.

Ingredients
6 large peppers (any color)
1lb of lean ground beef
8 oz of sausage
½ cup of chopped onions
⅔ cup of cooked rice
1 teaspoon of salt
1 teaspoon of pepper
1 tablespoon of minced garlic
20 oz of spaghetti sauce (or tomato sauce)
1 cup of shredded mozzarella cheese
Directions
Cut the peppers in half lengthwise
Remove seeds and membranes, and rinse.
Add enough water to a large pot to cover your peppers. Bring the water to a boil and add your peppers. Let cook for 5 minutes.
Drain your peppers and set aside.
Add ground beef, sausage, and onion to a large skillet. Brown and drain it.
Add garlic, salt, and pepper to the skillet. Saute it for 1 minute.
Add your cooked rice and half of your spaghetti sauce and heat until hot.
Spray a baking dish with a non-stick spray.
Stuff your peppers with the mixture and place into the baking dish.
Pour the remaining sauce over the top of the peppers.
Cover the baking pan with aluminum foil and bake for 30 minutes at 375° in the oven.
Remove from the oven. Remove the aluminum foil and top the peppers with mozzarella cheese.
Then cover and bake for another 20-25 minutes (uncover for the final 10 minutes).
Remove from the oven. Top with chopped parsley and serve.
