Ingredients (serves 4): -800g peeled plum tomatoes (2 cans) -1 onion -1 small fresh chilli -1 garlic clove -half a glass of white wine -a pinch of salt -half a teaspoon of sugar -a small bunch of fresh parsley -extra virgin olive oil
Finely chop your onion and chilly. Heat 3 tablespoons of extra virgin olive oil in a pan over medium-low heat, add your onion and chilli and squeeze a garlic clove in (you can chop it instead).
Add your white wine and let the alcohol evaporate for about 3/4 minutes. Add your tomatoes in, a pinch of salt and half a teaspoon of sugar (it will take out the acidity of the tomatoes).
Cover with a lid and cook very slowly for about 45 minutes, stirring occasionally.
Garnish with some freshly chopped parsley and enjoy!
