Spaghetti with Sage Butter Sauce | Quick & Easy Pasta Recipe
Welcome!
Today I decided to make a very simple pasta dish with a sage butter sauce. This incredibly easy recipe is affordable and delicious.
Ingredients
- A few sage leaves (a few more for garnish
- About 2 Tbsp of butter
- 450gm dried spaghetti
- Parmesan cheese
- Salt & pepper
Directions
1. Bring a pot of salted water to the boil. Add the spaghetti and cook until it is almost al dente.
2. Meanwhile, place butter in a large frying pan and turn the heat to low-medium. Add sage and allow to infuse the butter as it gently bubbles away in the pan.
3. Before the pasta is al dente, drain and add to the pan with the sage and butter, reserving some pasta water. Raise the heat to medium, add a ladle of pasta water and continue to stir and toss the pasta while the sauce begins to thicken.
4. Once the spaghetti is cooked to your liking, the sauce has thickened and coated the pasta, serve immediately. Shave a generous amount of parmesan over the plated dish and enjoy.

Brown Butter Sage Sauce
Thank you for watching my videos!! This brown butter sage sauce goes great with butternut squash ravioli, but that's just one application of this sauce. Use it with gnocchi, pasta, fish, chicken, steak, pork, potatoes, etc.
Brown Butter Sage Sauce Ingredients:
4 Tbsp. unsalted butter
4 Fresh Sage leaves chopped
Salt and Pepper to taste
Parmesan cheese to finish
Over medium heat, swirl butter and sage until golden brown and
frothy, approx. 3 mins. Add salt, pepper. Drizzle over or stir into pasta or gnocchi dish. Top with Parmesan cheese.
Lemon Pepper Chicken
Today I’m sharing my easy lemon pepper chicken recipe! This was the first chicken recipe I tried to make when I started cooking. It was so delicious that I would cook it at least thrice a week! This juicy and tasty chicken recipe does not need fancy ingredients and is beginner friendly. Once you try it, you'll cook it almost every day. So simple to make that everyone can make it. *RECIPE* (2 servings)
INGREDIENTS
1 lb/450g chicken thighs/chicken breasts
3 tbsp olive oil
3 garlic cloves
Optional: fresh parsley and lemon zest
— marinade —
1/2 tsp salt
1 tsp crushed black pepper
1 tsp oregano/mixed herbs
1/2 tsp cumin powder
Juice 1/2 lemon
METHOD:
1. Cut 1 lb/450g chicken thighs or chicken breasts into bite sized pieces about 1 inch thick
2. Add the marinade ingredients to the chicken, mix well and set aside for 30 minutes to 1 hour
3. On medium flame, heat 3 tbsp olive oil and infuse 3 crushed garlic cloves
4. Add the chicken without overcrowding the pan. This way they will brown well
5. Sear on all sides until browned and cooked through. Chicken thighs will be ready in 5-6 mins and chicken breasts in 3-4 mins
6. Optional: Garnish with some fresh parsley and lemon zest

SUBSTITUTES:
• No lemons?
1 tbsp lime juice can be substituted. Avoid lime zest however
• No cumin powder?
Skip it
• No oregano or mixed herbs?
Dried thyme, rosemary, tarragon, sage, mint and dill work well too
• No fresh parsley?
Fresh cilantro/coriander works well too

TIPS:
• The chicken can be chopped and tossed into salad, sandwiches, wraps and pasta
• Don’t overcook the chicken or it will get too tough
• The salt and lemon quantity might change depending on taste. The amounts mentioned will be suitable for most but adjust at the end if needed

LEMON GARLIC BUTTER CHICKEN
3 – 6 skinless chicken thighs
3 tablespoons butter divided or (ghee for paleo diet)
2 tsps minced garlic
1 tsp paprika
1 teaspoon onion powder
1/4 teaspoon salt and fresh cracked black pepper
Juice of 1/2 lemon + lemon slices, for garnish
1/2 cup (125ml) chicken stock
1 tablespoon hot sauce
1/4 teaspoon crushed red chili pepper flakes, optional
1/2 cup fresh chopped parsley

Brown Butter Tortellini
w/ Toasted Garlic and Asparagus
1 lb. cheese tortellini
1 lemon
3 tbsp. unsalted butter
8 oz. thin asparagus
2 clove garlic
Kosher salt and pepper
2 tbsp. chopped fresh tarragon (optional)
grated Parmesan
Notes*
* Meanwhile, using a vegetable peeler, remove 3 strips of zest from lemon. Thinly slice zest.

Lemon Chicken with Smashed Sweet Potato | Jamie Oliver
