Lemon Jello Fluff Pie Recipe
Fresh and Easy Homemade Lemon Pie
My mouth-watering sweet and sunny lemon pie is perfect for a hot summer day when you need a sweet treat!
Recipe:
Ingredients
Crust
1 ½ cups graham cracker crumbs (170g)
2 Tablespoons granulated sugar
1 Tablespoon brown sugar, firmly packed
7 Tbsp butter, melted (100g) salted or unsalted butter will work
Filling
2 14-oz cans sweetened condensed milk (792g)
5 large egg yolks
1 cup lemon juice, fresh preferred (236ml)
Whipped Cream
1 cup heavy cream (236ml)
⅓ cup powdered sugar (41g)
½ teaspoon vanilla extract
Freshly grated lemon zest, optional
Instructions

Crust
00:20 Preheat oven to 350F (175C)
00:24 In medium-sized bowl, mix together graham cracker crumbs and sugar. Add melted butter and stir until combined.
00:57 Press the crumb mixture evenly into the bottom and up the sides of a 9.5” pie plate. Transfer to 350F (175C) oven and bake for 10 minutes. Meanwhile, prepare your filling (if the crust finishes before the filling is ready, remove it from the oven but do not turn off the oven).
Filling
01:51 In a large bowl, whisk together condensed milk, and egg yolks, until thoroughly combined.
02:43 While whisking, gradually add lemon juice. Whisk well until all ingredients are thoroughly combined.
03:13 Once pie crust has finished baking, remove it from the oven and carefully pour the filling into the crust. Return to 350F (175C) oven and bake for 18-20 minutes or edges are set and center is set as well but still slightly jiggly if shaken.
03:51 Allow to cool at room temperature for 30 minutes then transfer to refrigerator to chill for 6-8 hours or (preferably) overnight. Before serving, prepare whipped cream topping.
Homemade Whipped Cream Topping
04:09 Combine heavy cream, powdered sugar, and vanilla extract in a large bowl (preferably a chilled metal bowl). Use an electric mixer to beat on low-speed, then gradually increase speed to high, beating until mixture is thick, fluffy, and stiff peaks have been achieved.
04:37 Pipe or dollop over pie before serving.
NOTE: I used an Ateco 848 piping tip to decorate the pie seen in photos and the video.

1 prepared graham cracker crust
*Do not use the 'Extra 2 slice' graham cracker crust by Keebler shown in the clip for this recipe as you won't have enough filling to fill it. Use a standard 9 crust.

My mother grew up during The Great Depression. She began cooking and collecting recipes in 1937. This is a very old recipe for Whipped Jello. People used to whip Jello because it would stretch it and double the amount of servings that you got from a box of Jello. You can make it with any flavor Jello that you like. There are no other ingredients, only what's in the box of Jello.

4 Light and Fluffy Jello Salads
When you want a sweet dessert but are watching your calories and fat, then here is a light and fluffy treat for you. These jello salads are so good and can be modified to sugar free and low calorie. They are light, fluffy, fruity, and oh so good! Jello salads are such a delicious snack or dessert and are good any time of year.
Orange and Pineapple Jello Salad
Ingredients
20 oz. can of crushed pineapple
15 oz. can of mandarin oranges
8 oz. container of whipped topping
3 oz. box of orange jello
1.34 oz. box of instant vanilla pudding
1/4 cup chopped pecans (optional)
Instructions
Measure out 1 cup of the juice from the oranges and pineapple and add it to a large mixing bowl. Add the jello and pudding and whisk until mixture becomes thick. Add the pineapple, oranges, and whipped topping mixing until everything is combined. You can also stir in the chopped pecans if you desire. Cover and refrigerate for 2 hours.
Lime Jello Salad
Ingredients
20 oz. can of crushed pineapple
8 oz. container of whipped topping
8 oz. package of cream cheese
2 3 oz. boxes of lime jello
2 cups of boiling water
1/4 cup chopped pecans (optional)
Instructions
Pour 2 cups of boiling water into the lime jello and whisk until all the jello is dissolved. Add the cream cheese to the dissolved jello, (I cut the cream cheese into chunks). Whisk the cream cheese until it has melted and blended into the jello. There will still be some small bits of cheese but that is ok. Add the pineapple with the juice and mix everything well. Cover and refrigerate for 2 hours. Then add the whipped topping and pecans if desired, stirring until completely combined. Place back into refrigerator until ready to serve.
Lemon Jello Salad
Ingredients
2 3 oz. boxes of lemon jello
3.4 oz. box of lemon pudding
8 oz. container of whipped topping
1 1/2 cups of milk
2 cups of boiling water
Instructions
Pour 2 cups of boiling water to lemon jello and whisk until dissolved. In a separate bowl mix pudding and milk, whisking until thick. Then combine jello and pudding together whisking until well combined. Cover and refrigerate for 2 hours. Add whipped topping and stir until completely combined. Refrigerate until ready to serve.
Strawberry Jello Salad
Ingredients
2 cups chopped strawberries
8 oz. container of whipped topping
2 3 oz. boxes of strawberry jello
16 oz. container of cottage cheese
Instructions
Mix together jello and cottage cheese until well combined. Add strawberries and whipped topping and stir until everything is completely combined. Cover and refrigerate until ready to serve.
