How To make Heavenly Dessert Cheesecake 1
1 T Graham Cracker Crumbs
1 c Low Fat Cottage Cheese
16 oz Nufchatel Cheese*
2/3 c Sugar
2 T Unbleached All-purpose Flour
2 T Skim Milk
1/4 c Almond Extract
* Neufchatel Cheese shoul be LIGHT Philly brand Neufachatel Cheese and it should be softened. ~-------------------------------------------------------------------------- Lightly grease bottom of 9-inch springform pan. Sprinkle with crumbs. Dust bottom; remove excess crumbs. Put cottage cheese in blender container Cover; process on high speed until smooth. In large mixing bowl of electric mixer, combine cottage cheese, neufchatel cheese, sugar and flour. Mix at medium speed until well blended. Add eggs, one at a time, mixing well after each addition. Blend in milk and extract; pour into pan. Bake at 325 degrees F., 45 to 50 minutes or until center is almost set. (Center of cheesecake appears to be soft, but firms upon cooling.) Loosen cake from rim of pan; cool before removing rim of pan. Chill. Top with fresh slices of strawberries or blueberries, if desired. VARIATION: Prepare pan as directed; omit blender method. Place cottage cheese in large bowl of electric mixer; beat cottage cheese at high speed until smooth. Add neufchatel cheese, sugar, and flour, mixing at medium speed until well blended. Continue as directed.

1. Digestiv Biscuits (200g)
2. Salted Butter (50g)
3. Hung Curd (1/2 Cup)
4. Cheese Spread (1/2 Cup)
5. Powdered Sugar (1/2 Cup)
6. Whipping Cream (1 Cup +1/4 Cup )
7. Egg (1)
10. Sweet Lime Zest (1/4 tsp)
11. Sweet Lime Juice (2 Tsp)
12. White Chocolate Ganache (1 Cup)
13. Blueberry Crush (1/2 Cup)
14. Sugar (1 Tbsp)
15. Water (1/2 Cup)
16. Dry Blueberries (2 Tbsp)
8. Maida (2 Tbsp)
9. Corn Flour (2 Tbsp +1 Tbsp)

Amazing Blueberry Cheesecake Recipe
Bursting with sweet blueberry flavor, this Blueberry Cheesecake recipe is extremely easy to make. Starting with a buttery graham cracker crust filled with a creamy cheesecake center dotted with juicy blueberries and topped with a luscious blueberry sauce, this cheesecake is perfect for any occasion. It’s light but decadent and guaranteed to impress.

Fluffy Japanese Cheesecake
Japanese Cheesecake (6 inch / 15cm)
INGREDIENTS :
A) 100g cream cheese
76g milk
35g unsalted butter
B) 35g All purpose flour
C) 38g egg yolks
D) 78g egg whites
40g sugar
日式芝士蛋糕 (6 寸 / 15cm)
份量: 一個6吋蛋糕
A) 100g 忌廉芝士
76g 牛奶
35g 牛油
B) 35g 普通麵粉
C) 38g 蛋黃
D) 78g 蛋白
40g 細砂糖
INSTRUCTIONS :
Step 1- Preheat oven 150°c. Double boil ingredients (A) Cream cheese, milk, butter in a mixing bowl. Whisk until no lump. Put ingredients (B) All purpose flour, mix well. Last ingredients (C).
Step 2- Beat egg whites, sugar separate into 3 portions. Egg white must be refrigerated before start beating (more stable when mixing) ; beat into soft peak.
Step 3- Separate egg whites into 2 portions, fold gently with cheese mixture using a spatula.
Step 4- Using the baking oil, spray on a 6” inch mould on all edges.
Step 5- Pour the mixture into mould. Stir the surface till smoothly with a stick. Prepare a tray then pour hot water around 1 inch height and bake the cheesecake in 150°c for a total of 70 minutes. First, bake 20 minutes with door close. Secondly, bake 25 minutes and leave a gap at oven’s door (around 1.5 cm) to let the hot steam slowly release out. This is to prevent the cake rises too high and the cheesecake surface from cracking. Third, rotate the cake and bake for another 25 minutes leaving a small gap while it bakes until golden brown. Total baking time is 70 minutes.
Important tips.
1. Cake pan must fully cover and spray with baking oil spray (the cake will rise perfectly)
2. Before start mixing,the egg white must refrigerate after separated with egg yolk.
3. Your egg whites need to be soft peak after adding sugar in.
4. Bake the cake at 150 c° with water bath. First 20 minutes, second 25 minutes(turn over the cake and leave a small gap at oven door) third 25 minutes. Before start the third 25 minutes, your cheesecake surface must starting turn golden brown. If not, you need to rise the temperature to 160° for the third 25 minutes.

Recipe:
Prep time: 15 to 20 minutes
Baking time: 30 minutes
Cooling time: 2 to 3 hrs
Crust:
1 1/2 cups of graham cracker crumbs (about 12 full crackers worth)
6 Tbsp of butter
1/4 cup of powdered sugar
Cheesecake Filling:
16 ounces Cream Cheese (room temperature)
2 large eggs (room temperature)
2/3 cup of sugar
1 tsp of vanilla extract
Strawberry Topping:
2 cups strawberries (fresh or frozen) (doesn't have to be exact)
1/2 cup of strawberry jelly (doesn't have to be exact)
3 Tbsp of sugar
1 Tbsp of cornstarch

Heavenly dessert | CHEESECAKE with rum and raisins
Hi. We will make an amazing dessert which will blow your taste buds. We will make a Cheesecake with rum and raisins. It is a fluffy and creamy goodness. This dessert is always on the table for Easter dinner.

~ Easter Dinner | CHEESECAKE with rum and raisins ~

For this recipe we use:
6 Big Eggs
200 gr / 7 oz Butter
600 gr / 21 oz Sour cream
400 gr / 14 oz Sugar
20 gr / 0.7 Rum Essence (if you want you can add vanilla)
6 tbs Semolina
6 tbs Plain Flour
5 gr / 0.17 oz Lemon zest
1000 gr / 35 oz Sweet dairy cheese
400 gr / 14 oz Raisins
Check the consistency of the batter in the video and if you need it more solid then add a bit more Sweet dairy cheese. If you can get the dry one without cream then add sour cream to the recipe. If not then don`t add just 1/3 of the sour cream.
In this recipe we don`t soak the raisins in rum because we want to give an overall hint of rum to the cake. You can do it as you like .
We make our cheesecake without any crust. You can make a nice base with it and then add the filling. It is up to you.
We start by breaking a few eggs in a bowl. We add the sugar. We mix it well to incorporate as much air as possible. We add the sweet dairy cheese. We give it a mix. We add the sour cream. We continue by adding the flour slowly while mixing. We continue by adding the semolina. We add the butter and we mix it until we get a smooth consistency. We add the rum and the raisins. Our batter is ready for baking so we move on by coating a 12 inch baking pan. We add the batter. Be sure to spread it evenly. We pre-heated the oven at 160 C or 320 F and we bake it for roughly 45 to 50 minutes.
Be sure to not open the oven for the first 25 minutes because the cheesecake will collapse. Even if it doesn`t have yeast it will rise a bit.
This is how our cheesecake looks like. It is a very creamy and fluffy dessert. We serve it with powdered sugar on top.
